1 large sweet potato, peeled and diced
1 small onion, diced
2 Tbsp FreshJax Smokey Southwest Seasoning
1 (14.5oz) can black beans, drained and rinsed
2 Tbsp minced cilantro
Toppings: lettuce, tomato, salsa, FreshJax Tropical Heat
Preheat oven to 375 degrees. Spread sweet potato and onion on a baking sheet and top with Fresh Smokey Southwest Seasoning. Bake for 30 minutes, stirring half-way through the cook time. When cook time is up, toss black beans and cilantro with roasted vegetables and scoop into tortillas with favorite toppings.
