4 cups white basmati rice
5 cups water (or vegetable broth)
2 yellow onions, chopped
2 cups broccoli, chopped
2 (28 oz) cans diced tomatoes
2 (15 oz) cans corn
4 cups spinach, chopped
1 cup cilantro, chopped
1 Tablespoon black pepper
2 Tablespoons cumin
3 Tablespoons FreshJax Smokey Southwest Seasoning
3 Tablespoons sea salt
1 cup nutritional yeast
FreshJax Hickory Smoked Coconut “Bacon”
Mix rice and water in a large pot and bring to a boil. Reduce to low heat and cover for 25 minutes.
While the rice cooks, sauté yellow onions in 2 Tablespoons of water on medium/high heat for 3 minutes. Next, add broccoli, tomatoes, and corn. Reduce heat to medium/low and simmer for 3 minutes. Mix in chopped spinach and sauté until the spinach is wilted. Add cilantro, pepper, cumin, FreshJax Smokey Southwest Seasoning, and sea salt. Continue to simmer on medium/low heat for around 5 minutes, or until rice is cooked.
When rice is finished, stir vegetable mixture into rice and add nutritional yeast. Mix again, top with FreshJax Hickory Smoked Coconut “Bacon” and enjoy!
