2/3 cup uncooked quinoa, rinsed
2 cups vegetable broth
1 (15 oz) can of your favorite beans, rinsed
1/4 cup nutritional yeast
2 Tablespoons FreshJax Italian Seasoning
1 (6 oz) can tomato paste
salt to taste
Bring the broth to a boil in a medium pot over high heat. Add quinoa, lower heat to simmer, cover and cook for 20 minutes. Check the quinoa; if the liquid is not yet absorbed, cover and cook for 5-10 minutes longer, until the liquid is absorbed and quinoa is softened. Set aside.
Preheat oven to 350F. Line two cookie sheets with parchment, or spray with nonstick spray.
While the quinoa is simmering, mash the beans with a potato masher in a large bowl. Add remaining ingredients, including quinoa and combine well.
Roll the mixture into bite size balls. Place on cookie sheets and bake in preheated oven for 30 minutes, until well browned on the outside. Serve hot with a side of marinara or FreshJax Tropical Heat Sauce for dipping.
