This colorful kale salad will fill you up without weighing you down!
1 bunch kale
2 hass avocados
1/4 cup sliced olives (check out Olive My Pickle)
1 (15 oz) can chickpeas, drained & rinsed
1 small red bell pepper, diced
1/4 red onion, diced
1 Tbsp lemon juice
2 tsp FreshJax Greek Seasoning
Wash kale and tear the leafy parts into bite-sized pieces, removing the stems. Add avocado and massage it into the kale (yes, with your hands... it's delightfully messy). This step helps to take out some of the natural bitterness from the kale and serves as the salad dressing. Plus, avocado is a great moisturizer for your skin.
Next, add in the olives, chickpeas, red bell pepper, and onion. Toss to combine, then add the lemon juice and Greek Seasoning. Stir it up one more time and enjoy!
