Are clumpy spices ruining your culinary adventures? Let your taste buds do the talking! We'll examine
the bothersome issue of spice clumping in this blog post and share four easy-to-implement yet efficient
methods for maintaining fresh, flowing spices. Say goodbye to clumpy disasters and hello to elevated
dishes with ease!
Ever reached for your favorite spice only to find it transformed into a solid clump? Understanding the factors behind spice clumping is key to preventing this frustrating phenomenon. Here's a closer look at what causes spices to cake together:
Moisture: Moisture is a common enemy of spices. When spices are exposed to moisture from the air or improper storage conditions, they can absorb it, causing them to clump together. This moisture can come from various sources, including humid environments or even condensation forming inside improperly sealed spice containers.
Heat: Heat accelerates the deterioration of spices and can lead to clumping. Storing spices near heat sources like stoves, ovens, or sunlight can cause them to lose their potency and texture more rapidly, increasing the likelihood of clumping.
Improper Storage: How you store your spices can greatly affect their longevity and texture. Storing spices in humid or warm environments, such as near the stove or dishwasher, can promote clumping. Additionally, leaving spice containers open or improperly sealed exposes them to moisture, hastening clumping.
Quality of Spices: The quality of the spices themselves can also influence their tendency to clump. Lower-quality spices may contain additives like anti-caking agents or fillers, which can contribute to clumping. Choosing high-quality, pure spices can reduce the likelihood of clumping and ensure optimal flavor and texture.
Understanding these factors empower you to take proactive measures to keep your spices fresh and free from clumps. By implementing proper storage practices and selecting high-quality spices, you can enjoy consistently flavorful dishes without the frustration of clumpy spices.
Spices are like culinary treasures, adding depth, flavor, and aroma to dishes. However, their potency and quality can diminish over time, especially when they succumb to the dreaded clumping effect. Fear not! Here are four tried-and-true techniques to maintain your spices in peak condition:
Store in a Cool, Dry Place/Keep them away from heat:
Heat and humidity are the archenemies of spices. To preserve their flavor and texture, store your spice collection in a cool, dry place away from direct sunlight and heat sources like stoves or ovens. Optimal storage locations include pantries, cabinets, or spice racks positioned away from moisture-rich areas like sinks or dishwashers.
Use Silica Gel Food Grade Packs:
Silica gel packs are unsung heroes in the battle against spice clumping. These small packets contain silica beads that effectively absorb moisture, keeping your spices dry and free-flowing. Simply toss a silica gel pack into each spice container to help maintain their freshness and prevent clumping. Ensure you're using food-grade silica gel packs to avoid any contamination.
Add a Grain of Rice:
Harness the power of a humble grain of rice to combat spice clumping. Rice acts as a natural desiccant, absorbing excess moisture and preventing spices from clumping together. Place a clean, dry grain of rice in each spice jar to help regulate moisture levels and maintain optimal texture. It's a simple yet effective solution for keeping your spices free-flowing.
Rotate Your Stock:
Spices may be timeless in flavor, but they're not immortal. To ensure you're always working with fresh, potent spices, make it a habit to rotate your stock regularly. Use older spices first and replenish your collection with fresh ones to maintain maximum flavor and aroma. Labeling your spice jars with purchase or expiration dates can help you track their freshness and rotation cycle.
By implementing these four tips, you'll bid farewell to clumpy spices and welcome a world of vibrant, flavorful dishes. With proper storage, moisture control, and rotation, your spice collection will remain a reliable ally in your culinary endeavors, enhancing every dish with its aromatic allure.

A popular dish in Korean cuisine, bibimbap has become loved by food enthusiasts globally. Bibimbap combines a harmonious blend of rice, assorted vegetables, protein, and a delectable sauce, which you can augment with organic spices, to create a truly exceptional culinary experience.
With its enticing aromas, vibrant colors, and balanced flavors, bibimbap has been winning hearts, one bowl at a time, for its ability to cater to individual preferences and dietary requirements.
As infinitely customizable as it is delicious, each component of bibimbap can be tailored to create a unique and personalized version. Whether you’re a vegetarian, a spice lover, or a meat aficionado, there's a bibimbap variation perfect for you.
Get ready to discover a new dish that may become one of your favorite recipes. We're sharing the ingredients for authentic bibimbap and how to take these basics to make your versions.
Table of content
Bibimbap, pronounced "bee-bum-bop," is a beloved Korean dish with a delicious blend of flavors and textures causing each bite to become a delightful surprise.
"Bibimbap" translates to "mixed rice" in Korean, which perfectly describes its essence. As such, bibimbap consists of a bowl of steamed rice topped with colorful and meticulously arranged vegetables, a choice of protein, and a spicy chili sauce known as "gochujang."
Topped with a fried egg, the final presentation creates a visually stunning mosaic of colors and textures for a truly aesthetically pleasing culinary experience. Before indulging, it's customary to mix everything thoroughly, coating the rice with the vibrant flavors of the toppings.
The magic of bibimbap lies in its customizability. You can choose your favorite ingredients and adjust the spiciness to suit your palate.
These ingredients are almost always present:
The many ingredients in Bibimbap may seem complex, but once you have the basics, it's pretty easy to assemble. We'll guide you through each step so you can create delicious Bibimbap at home.
Rinse the rice in cold water and soak for about 30 minutes. If you have a rice cooker, follow the manufacturer's instructions. If using a saucepan, bring the rice and water to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
Choose thinly sliced beef, such as ribeye or sirloin. Combine soy sauce, brown sugar, minced garlic, and sesame oil in a bowl. Add the beef and marinate for at least 30 minutes in the refrigerator.
Create the authentic sauce by mixing gochujang (Korean red pepper paste), sesame oil, sugar, water, roasted sesame seeds, apple cider vinegar, and minced garlic in a small bowl.
Select spinach, bean sprouts, carrots, zucchini, and shiitake mushrooms. Blanch the spinach and bean sprouts separately, then sauté the rest of the vegetables individually with a bit of sesame oil and a pinch of salt. Set them aside.
Heat a non-stick pan over medium heat, add a touch of oil, and crack your eggs into the pan. Cook until the whites are set, but the yolks remain runny.
Place a generous serving of steamed rice in a large bowl. Next, arrange the marinated beef and sautéed vegetables in colorful sections atop the rice. Drizzle with bimbap sauce and place the sunny-side-up fried egg in the center.
Now, for the fun part, your homemade Bibimbap is ready to enjoy! Mix everything thoroughly until all the ingredients are combined. Or, as one food blogger describes it, "turn it into a delicious mess," and dig in!
It's time to get creative and turn bibimbap into your own culinary masterpiece. Here are some exciting ways to put your unique spin on this Korean classic.
Try nutty and nutritious brown rice for a hearty, earthy dimension to your bibimbap. Or consider using quinoa for a gluten-free, protein-packed alternative that pairs wonderfully with bibimbap's vibrant toppings.
Here at FreshJax we also love to "riff on" our favorites. While researching this article we tried this dish with several types of rice, glass noodles and even quinoa (really, we try every thing with quinoa!)
Substitute marinated chicken, seafood, or tofu for the meat. Each of these protein variations complements the spicy Bibimbap sauce beautifully.
For those who prefer a milder option, a soy sauce-based sauce can also be used. Also, you can add a dash of honey or maple syrup to your sauce for a sweeter note that balances the heat of the gochujang. Or mix mayonnaise or Greek yogurt into the sauce to create a creamy texture that mellows out the spiciness.
Want a little variety or just prefer to DIY? The blog My Korean Kitchen (amazing blog, by the way!) has a great article with 4 different types of bibimbap sauces (Classic Gochujang Bibimbap Sauce, Funky Doenjang Bibimbap Sauce, Meaty Gochujang Bibimbap Sauce, and kid-friendly Soy Sauce Bibimbap sauce). We tried them all... Huge Thumbs Up!
Enhance the flavor profile with pickled radishes, cucumbers, or kimchi for a tangy crunch to your Bibimbap. Or slice up some creamy avocado to introduce a buttery richness to your dish.
One other thing we liked is that it is super easy in this dish to work around picky eaters.
Swap the sunny-side-up fried egg for a poached or fully cooked fried egg. For a different texture, scramble the eggs before placing them on top.
Eat primarily plant-based? We have you covered! Hillary's Tofu Scramble makes a great substitute for the eggs.
Traditionally served in a bowl and combined before eating, you can choose your individual method of attacking this medley of ingredients. If you prefer to start with the egg and work your way down without mixing the ingredients, go for it! Or you can think outside the bowl and create a wrap using a sheet of seaweed or lettuce to contain your bibimbap ingredients.
Elevate the flavors in your bibimbap with organic spices from FreshJax. Our high-quality, organic spices and blends can add a new dimension of taste to this delightful Korean dish. Explore our extensive selection of organic spices to compliment your bibimbap, like our Organic Garlic Granules and Organic Galangal. Or spice it up with a dash of our Organic Gochugaru Chili Flakes.
Not Sure which blends to try? We can help!
When we tested it in our kitchen at the shop, we tried Shichimi Togarashi (our newest blend) as well as Brunch Life (because it is big on the sesame seeds) and Thai Seasoning. Togarashi was our favorite followed by Thai.

Whether you're a fan of Korean cuisine or simply looking to try something new, bibimbap is a must-try dish that will undoubtedly leave you satisfied and delighted.
By the way, if you do make your own, we'd love to see pictures!
Also sometimes called shichimi, togarashi is a Japanese 7-spice mixture that is a common table seasoning that is used much in the same way salt and pepper are used in the United States. It contains several popular Japanese spices, such as:
The ingredients in the blend can vary somewhat depending on the regional location or availability of ingredients, but red pepper is always the main addition. Togarashi can be bought entirely premixed, making it easy to add to dishes while cooking or snacking.
Read this article to learn more about the history behind togarashi, how it can be used, and much more!

Togarashi dates all the way back to the 17th century when it was sold by herb dealers! It originated from the small fishing village of Edo, which is now the bustling metropolis of Tokyo, Japan. Its blend of ingredients was made possible by the global trading that was beginning to take place around that time. Chili peppers were introduced to Japan and togarashi seasoning was invented! In fact, it really hasn’t changed since it was invented back then. It’s been a staple in Japanese cuisine ever since, adding a special taste to a variety of dishes.
Togarashi has a unique taste, combining both the salty-savouriness of unami and a sweet, smoky flavor. It is also a bit spicy, thanks to the Japanese pepper it gets its namesake from. It has been described as earthy and tangy, as well as a little bit citrusy. The flavor of this seasoning is complex, yet agreeable, allowing it to be used in a variety of different ways in the kitchen.
Togarashi is an extremely versatile spice blend and lends itself very well to a variety of uses! Here are some common ways to use it:
One of the classic ways to utilize togarashi seasoning is to sprinkle it on some roasted rice crackers. The result is a quick and wholesome snack that is both salty and sweet. If you’re feeling fancy and have some extra time on your hands, you can even try making homemade senbei or kakimochi crackers for an authentic Japanese treat.
Another delicious way to incorporate togarashi seasoning into your next snacktime is to mix a little into your mayonnaise. Simply mix your desired ratio of mayo to togarashi seasoning in a bowl, taste it, and then dip with it or spread it on your favorite sandwich.
Craving some good old-fashioned ramen but want to mix things up a little bit? Why not add a dash of togarashi seasoning? The savory, smoky flavor is sure to complement the ramen broth and noodles. It's a fun twist on a classic comfort snack.
The next time you’re making deviled eggs, add a little togarashi seasoning to them instead of paprika. The smokiness of the spice will add a unique flavor that is sure to make your eggs stand out at the next potluck or outdoor get-together.
Wow your friends or family your next movie night by sprinkling some togarashi seasoning into your popcorn! This is a great option if you have people in your life who are vegan or dairy-free since it skips the butter, but not the flavor.
Besides just snacking, togarashi is also excellent for incorporating into whole meals! Here are six tasty ways to cook with it during your next mealtime:
For a savory dinner experience, sprinkle togarashi over cooked rice or udon soba noodles for an extra layer of flavor and heat. Cook your noodles and a protein and vegetables of your choice, and add seasoning to taste.
The next time you're planning a BBQ or grill, try using togarashi as a dry rub or brine! Some of the meats that it compliments best include:
The complex flavor and saltiness of the seasoning pair excellently with any grilled or BBQ meats, so don’t hesitate to try this one at your next summer gathering.
Tempura is delicious and easy to make at home on the stove or even with an air fryer. Mix togarashi into your tempura batter for a unique twist on this classic Japanese dish. The spices in the blend can enhance the flavors of the fried vegetables or seafood.
Roasted vegetables is a classic, healthy meal that is also surprisingly hearty. Heat up your oven, dice up whatever vegetables you like, and toss them in an oil such as olive or avocado. Add togarashi seasoning next and put them in the oven. Try serving the veggies over pasta or brown rice!
Togarashi is also wonderful sprinkled on top of sushi rolls or sashimi. The citrusy and spicy notes of it will bring out the flavors of the fish, as well as add a kick of heat. You can also add togarashi tempura seasoning and use it to make tempura sushi.
For a yummy and eye-pleasing breakfast, add togarashi to your avocado toast! Mix it into the mashed avocado and spread away, or add a fried or soft-boiled egg and sprinkle it on top and serve.

Grill Masters all over the world love the reverse sear. It’s a grilling technique that’s been around for just over twenty years, and was popularized by James Beard award-winning chef J. Kenji Lopez-Alt. But you don’t have to be a master chef to pull off the perfect reverse sear! Today, we’re going to share all of the secrets you need to know to grill up your favorites with the reverse sear technique.
Photography by Marc (@ales.n.tails) who turned us on to Reverse Searing in the first place. Thanks Marc!
Table of content
First, let’s explain what a reverse sear actually is. This technique has gained popularity among culinary enthusiasts and home chefs for its ability to produce perfectly cooked, evenly colored, and flavorful dishes. This method, often used for thick cuts of meat like steaks or roasts, involves reversing the traditional order of cooking steps. First, you slow-cook the meat at a lower temperature. Then, you finish it with a high-heat sear.
The process starts with bringing the meat to an internal temperature that is just below the desired doneness. This is typically done using indirect heat. Some people use a cooler part of the grill, but you’ll have much more control if you use an oven.
The point of slow-cooking is that you’ll have precise control over the meat's internal temperature. This reduces the risk of overcooking the outer layers while waiting for the center to reach the desired doneness. This slow-cooking phase also helps to break down collagen and render fat, resulting in a more tender and flavorful end product.
After reaching the desired internal temperature, the meat is then subjected to a quick sear on high heat to develop a caramelized crust on the exterior. This final searing step not only imparts a visually appealing golden-brown color but also enhances the overall flavor by creating a Maillard reaction. The Maillard reaction is a complex chemical process that occurs when proteins and sugars react under high heat. It’s what gives your steak that tasty outer layer.
The reverse sear offers several advantages over the traditional searing-then-roasting method. One of the main benefits is the more even distribution of doneness throughout the meat, ensuring that each bite is consistently cooked to perfection. Additionally, the slow-cooking phase allows for a greater margin of error. This makes it so much easier for you to achieve the desired level of doneness without the risk of overcooking.
This technique is particularly well-suited for thicker cuts of meat, as it addresses the challenge of achieving uniform doneness across the entire piece. Whether preparing a thick ribeye steak, a bone-in pork chop, or a roast, the reverse sear method has become a go-to approach for those seeking to elevate the quality of their meat dishes, providing a delectable combination of tenderness, juiciness, and a flavorful crust—all achieved through a carefully orchestrated reversal of the cooking process.
So, ready to start reverse searing? Here’s everything you need to do to create a perfectly cooked, juicy piece of meat.
Start with a thick cut of meat, such as a ribeye steak, pork chop, or roast. Thicker cuts work best with the reverse sear method. Bone-in cuts also work really well with this technique!
Season the meat generously with salt and pepper and your preferred organic spices and grill seasonings. Allow the meat to come to room temperature for more even cooking before putting it in the oven.
Preheat your oven to a low temperature, around 225°F to 250°F . This low heat will slowly cook the meat. Use a meat thermometer to monitor the temperature of your meat.
Place the seasoned meat on a wire rack set inside a baking sheet or pan. This lets the air circulate all around your meat. Slow-cook the protein in the preheated oven until it reaches an internal temperature 5 to 10 degrees below your desired doneness. This could take 30 minutes to a couple of hours, depending on the thickness of the cut. Most steaks and chops will be done between 20 minutes and an hour.
Remove the meat from the oven and let it rest while you prepare for the searing step. This rest allows the juices to redistribute within the meat.
Preheat a skillet, grill, or any high-heat cooking surface. Sear the meat on high heat for a short duration on each side, creating a flavorful crust. This step should take only a few minutes.
Allow the meat to rest for a few minutes before slicing. This rest period lets the juices redistribute, ensuring a juicy and flavorful result.
Slice or serve your meat and watch it disappear. If you’re lucky, there will be enough for seconds!
The exact time your meat will spend in the oven varies based on how thick the meat is and how hot the oven is. This is why it’s so important to use a meat thermometer; the timing is highly variable. Meat continues to cook when you take it out of the oven, so it’s important to pull it early so that you don’t overcook it!
We’ve included this chart as an example of what meat cooking time looks like for ½ inch steaks in an oven set at 250°F.

Want to elevate your reverse seared protein? Here are some of the secrets that will have your guests convinced you’re the king of the grill.
So now that you know everything about this grilling method, what will you try first? Here are some of the best meats to use with the reverse searing technique.
Reverse searing was developed for steak, and it’s no surprise that it’s been well-adapted to several cuts of beef, including:
Thicker cuts of pork are perfect for reverse searing, including:
Yes, you can reverse sear poultry! Just make sure that your cuts are thick enough; an extra-thin pounded chicken cutlet won’t get the full benefits of a reverse sear.
Do you have something slightly more exotic in mind for your grilled dinner? Other types of meat can benefit from the reverse sear method, especially if you’d like them to be more tender.
While traditionally associated with beef, the reverse sear can be adapted for thick fish filets, including:
The appropriate timing for fish in the oven differs from those of other types of meat. Fish has basically no collagen, meaning it dries out much more quickly than meat. Watch your fish closely, as it will get faster more quickly than comparably thick cuts of meat. The FDA recommends that fish be cooked to about 145°F; however, many cooks prefer fish like halibut at 125°F. This means you should pull your fish when your filets get to 110°F-135°F.
No matter what your burgers are made out of– beef, turkey, a blend of meats– you can use the reverse sear technique! Thick, handmade burgers develop a flavorful seared crust and juicy interior using this method. And they taste even better when perfectly flavored with organic spices and grill seasonings.
While cauliflower and portobello mushrooms are often used like meat, you can’t effectively reverse sear them! These steak substitutes don’t have the same type of fibers that you find in meat, and it will just dry out your vegan substitutes. Instead, toss these directly on the grill.
Take your grill game to the next level with FreshJax’s organic spices and grill seasonings. Our flavorful spices and blends will elevate your cooking. Check out our unique catalog for inspiration, and let us know how your reverse searing went in the comments!

Gingerbread is a classic holiday treat known for its unique spicy sweetness that can’t be found in any other dessert. A classic gingerbread spice mix is essential to achieving the warm, mouthwatering taste that gingerbread is known for – but with the endless range of spices available, you might find it difficult to determine which are best to include in your gingerbread recipe.
You can create the best gingerbread to kick off your holiday baking session using delicious organic spices. But what spices are essential to making this delicious dessert? Read more to find out!
Gingerbread is a staple of many holiday meals, especially around Christmas time. But what’s the history behind this classic dessert?
The first recipe for gingerbread dates back to Greece in 2400 BC. After this, Chinese recipes for gingerbread started to be developed during the 10th century. During the late Middle Ages, Europeans developed their recipe for gingerbread, and these cookies were a staple at Medieval fairs across England, Holland, Germany, and France.
The traditional decorations you’ll find in gingerbread cookies are thought to come from Queen Elizabeth I, who had gingerbread cookies created to resemble dignitaries visiting her court. Festivals known as Gingerbread Fairs started rising during this period, with the cookies served at these festivals referred to as “fairings.”
The association between gingerbread and Christmas didn’t come around until later – when these desserts were made in England, they were eaten during any season, and the shapes of the cookies would change with the season. You could find flower gingerbread cookies in the spring and beautiful, bird-shaped cookies during the summer. Over time, the warm flavors only found in gingerbread started to be associated with the holiday season, but plenty of people still enjoy gingerbread year-round!
Gingerbread is a classic holiday treat that you’ve probably tried before, known for its delicious spicy sweetness that separates it from other holiday desserts. The following spices are most commonly used in gingerbread spice mixes:
But what are the specific flavor properties of these spices, and how do they contribute to a mouthwatering gingerbread?
Let’s start the list with an obvious must-have to make any gingerbread dessert: the ginger itself! Using organic ginger, you can create a holiday dessert that perfectly balances spice and sweetness. This spice has a bold, aromatic flavor that adds something special to every dish and is the starting point for any gingerbread spice mixture.
Using ginger, you can create complex flavors you and your holiday guests love – the perfect way to make your holiday desserts as memorable as the main course!
Cinnamon is a popular spice for a reason – and one that’s vital to any well-rounded gingerbread spice mix. This spice originates from the inner bark of the Cinnamomum tree and is sold as sticks or ground into a fine powder, the latter of which is best for creating your gingerbread spice mixture.
Cinnamon has a unique spiciness that makes it essential to bring out the complex flavors of a classic gingerbread recipe. Organic cinnamon is perfect because it adds a distinctive woodsy flavor to anything it’s used in and a delicate, smooth sweetness that can’t be beaten. Once you’ve included cinnamon in your gingerbread recipe, you’ll want to use it in plenty of other desserts – so consider adding tasty cakes and cookies to your holiday baking lineup!
If you’re looking for a spice that truly stands out from the rest, nutmeg is a must-have. This spice is the key to any delicious gingerbread recipe because of its unique flavor profile, combining sweet, fresh flavors with a woodsy, nutty taste that balances any gingerbread dish.
This spice comes from the Myristica evergreen tree, native to Indonesia. When the fruits of this tree ripen, they split open and reveal a shell-covered seed surrounded by an aril outer lattice. The seeds within this shell can be ground into nutmeg to bring spice and earthy flavors to practically any dish – especially a mouthwatering holiday gingerbread. Add some organic nutmeg to take your tasty gingerbread recipe to the next level.
Another spice crucial to creating fantastic gingerbread is allspice, a spice that’s lesser-known to some bakers but still an incredible addition to many dishes. This spice comes from the brown dried berry available from the tropical Pimenta dioica tree, native to Central America and the West Indies. This spice’s name originated in the seventeenth century when Europeans using the spice decided that it tasted like a combination of many similar spices, including nutmeg, cinnamon, and clove.
Allspice is essential for any gingerbread recipe because of its special combination of flavors that can’t be found with any other spice. It’s the perfect complement to the sweet and savory flavors you expect out of gingerbread – and it’s sure to make your holiday baking better than ever before.
Cloves are a must-have for your gingerbread recipe, a powerful spice that brings a distinctive flavor to any dish it’s added to. This spice includes a higher concentration of aroma compounds than any other spice, giving it a robust flavor that only requires a little to go a long way. A dash of Greek seasoning in the right place will have everyone at the dinner table shouting “Opa!” The zesty flavors of Greek seasoning are perfect as part for your hummus recipe or when sprinkled over lamb, beef, or chicken. Greek seasoning is not just a standalone spice blend but a vital thread in the intricate tapestry of Mediterranean cuisine. The Mediterranean region is renowned for its diverse culinary traditions, each reflecting the unique tastes and cultural influences of its respective locales. While Greek seasoning embodies the essence of Greek cuisine, its components have a lot in common with other Mediterranean flavor profiles, connecting it to a broader Mediterranean culinary heritage.
Greek seasoning, or "Greek spice blend," originates from the rich culinary traditions of Greece. Greek cuisine is celebrated for its use of fresh ingredients, bold flavors, and the Mediterranean diet's health benefits. The seasoning itself reflects the country's historical and cultural ties to the Mediterranean region, where trade and culinary influences have flowed for centuries.
The combination of herbs and spices results in a Greek seasoning with a well-balanced and robust flavor profile. It's savory and slightly sweet, with earthy undertones and a touch of warmth. The blend is versatile, making it suitable for various culinary applications.
Greek seasoning, like other Mediterranean cuisine, is characterized by a few fundamental flavor elements. There’s a heavy reliance on aromatic herbs like oregano, thyme, rosemary, and basil. These herbs not only impart flavor but also have historical medicinal uses. Garlic and onion, both common components of Greek seasoning, are frequently used throughout Mediterranean cuisine to add depth and savory undertones to dishes.
The use of citrus, particularly lemon, and extra-virgin olive oil is a shared theme in Mediterranean cooking. These ingredients brighten dishes and add a layer of richness and complexity. Like its culinary cousins Ras el Hanout and Za’atar, Greek seasoning features a combination of aromatic herbs, spices, and seeds, adding complexity and depth to dishes. Greek seasoning is delicious on organic, locally-sourced products like tomatoes, cucumbers, bell peppers, feta cheese, and other fresh staples go well with this complex spice combination.
The individual components of a Greek seasoning recipe vary between blend recipes. Here are the organic ingredients we use to make the flavor pop!
This carefully crafted combination of organic ingredients forms the foundation of Greek seasoning, resulting in a well-balanced, robust, and flavorful blend.
There are as many uses for Greek seasoning as there are Greek islands. Greek seasoning is a versatile culinary treasure, and its applications span a variety of dishes. In Mediterranean dishes, Greek seasoning takes on the role of a cherished staple, enhancing classics such as Greek salads, moussaka, tzatziki sauce, and souvlaki with a burst of flavor that elevates them to new heights.
Greek seasoning also sees a lot of use in marinades. For chicken, lamb, or fish, a delightful concoction emerges by combining Greek seasoning with olive oil, lemon juice, and a hint of yogurt. This mixture transforms these proteins into delectable, tender delights, infused with the essence of the Mediterranean. You can also directly season grilled meat and vegetables with Greek seasoning, elevating their flavor and turning them into savory, aromatic delights.
You can also get really creative with your uses of Greek seasoning. One unique application is in baked goods, where even a pinch of Greek seasoning can infuse your bread or pastry dough with a surprising savory kick, adding depth and intrigue to your baked treats. It also makes an excellent popcorn seasoning.
In a surprising twist, Greek seasoning finds its way into fruit salads. A small amount can enhance the sweetness of a fruit salad, especially one featuring refreshing watermelon, creamy feta cheese, and fragrant mint. This unexpected combination creates a harmonious blend of flavors that's both unique and delicious. It goes well with breakfast foods, like scrambled eggs, and can even be used to create flavorful infused olive oil.
Lastly, Greek seasoning can even adorn cocktail rims, taking your libations to new heights. Use it to rim glasses for cocktails like a Mediterranean-inspired Bloody Mary or a savory martini, infusing your drinks with the enticing flavors of the Mediterranean. This unexpected touch brings an element of sophistication to your cocktails, making them a conversation starter at any gathering.
Our FreshJax Friend Marc @Ales.n.Tails sent us this Terrific Lamb Burger Recipe. The Burgers are reverse seared to seal in the flavor and have a unique spread of toppings to really make it shine. He used feta cheese and red onions on top with a Tzatziki Sauce for the condiment. His Sauce may be secret, but FreshJax Founder Hillary has one we can share…

Plant-based meat alternatives—or PBMA—have been seeing a lot of coverage lately. Not only are these alternatives quickly growing in popularity, but they’re becoming more advanced each day, too, thanks to food science.
There are a ton of reasons why individuals might opt for plant-based meat alternatives; they may be looking for a meat-like experience but have an ethical objection to meat, they may be looking for zero-cholesterol foods that nonetheless satisfy that innate craving, or they may abstain from certain meats due to religious reasons. People may simply want to give them a try to see what all the fuss is about!
Whatever the reason for eating PBMA, seasoning is key when preparing many meat dishes, and the same applies to plant-based meat alternatives. That’s why we’re exploring some of the most popular meat alternatives and how to prepare them right. Let’s jump in.
Tofu, for many, is the quintessential meat alternative. This alternative has made a big comeback recently. This alternative comes in various levels of hardness at the store: you’ll typically find levels of soft, firm, extra firm, and super firm. While soft is the consistency of pudding or yogurt, used for smoothies and desserts, extra firm is often used as a chicken substitute.
Many people describe tofu as tasteless. There can sometimes be a distinct soy taste, but it can be quite subtle, and it is rarely noticed. The preparations of this alternative vary to such a degree that its versatility rivals that of any meat with ease. Tofu can be baked, fried, sauteed, blended, uncooked, boiled, roasted, air fried—and more. It can be used to make savory dishes, desserts, and everything in between.
However, tofu often must be dried to make meat-like dishes. You can either use a tofu press or use a couple of plates to squeeze the water out—or use towels to pat it dry. Though it isn’t frequently recommended, you can also simply drain the tofu and bake it until it’s dry—but that will take a while. Additionally, some people freeze this meat alternative before cooking it, as freezing it causes it to develop a more noticeable texture.
When it comes to seasoning tofu, there’s a lot to consider. But—remember, it has very little of its own flavor. One huge tip: Marinating is everything. The great thing about tofu seasoning is that it gives you a totally blank canvas to work your magic on. It absorbs flavors like nothing else, and anything you put into tofu comes through loud and clear. While when making steak, the name of the game might be embracing and enhancing the natural flavors that are already there, it’s the opposite with tofu.
This versatility also makes it important to season; if you want to make a delicious tofu scramble (a common scrambled egg substitute), you’ll want to rely on a medium-firm tofu and scramble seasonings, like nutritional yeast and onion. (Or our professionally crafted blend) But, if you’re interested in making firm, crispy General Tso’s tofu, you’ll want to utilize spices like heavy amounts of ginger, red pepper, garlic, and soy sauce—and start with extra or super firm levels. Still, if you want a high-protein, zero-cholesterol smoothie, you may want to lean into spices like ginger along with fresh fruit and make use of some soft levels.
Seitan is a lesser-known but highly popular meat substitute made from gluten. While unsuitable for those with gluten allergies or sensitivities, or for those with Celiac, seitan is suitable for those who are not averse to gluten. Seitan can be made from refined gluten or by kneading and rising dough made with wheat flour. Seitan generally must be cooked. Wheat flour should not be eaten raw. The ways seitan can be prepared vary, but it is very often battered and fried as a chicken substitute.
It’ll be up to you to impart the flavors you want in your seitan dish. Seitan does have a distinctive and generally pleasant taste, somewhat akin to that of bread, which can fairly easily be covered up with whatever other spices you’d like to use. If you’re going for a fried chicken substitute, you may rely on spices typically used in chicken—poultry blends, sage, garlic, black pepper, paprika, etc. may make up your seitan seasoning. Similarly, if you’re making seitan steaks, you might opt for caramelized onions or onion powder, black pepper, liquid smoke, steak sauce, steak seasoning blends, and Worcestershire sauce.
Tempeh is made out of soybeans, but with a big caveat—they’re fermented. Rather than making milk from them and adding thickening agents, as is the case with tofu, they’re fermented in a controlled process that results in them clumping together in “bricks,” which are used as meat substitutes. Tempeh has a much more noticeable flavor than tofu and tastes distinctly earthy and nutty—some may liken it to certain cheeses, and tempeh is often used to make plant-based bacon alternatives.
When it comes to tempeh seasoning, you can think of the flavor fullness as a spectrum; if tofu is at the far end of low flavor, seitan is somewhere in the middle, and tempeh has a clear distinct, noticeable flavor that is impossible to ignore or mask. That’s why, when it comes to seasoning tempeh, the trick is often to lean into the flavor. Tempeh has some wonderful flavor components that can really shine if they’re given a little bit of attention. With a strong earthy, almost nutty flavor, tempeh possesses a great potential for umami, making it a prime candidate for seasonings that are smoky and rich—like a Spicy All Purpose Seasoning or Smokey Southwest Grill Seasoning.
Humans have been loving—and avoiding—meat for centuries—and for numerous reasons. As such, the amount of plant-based meat substitutes that exist makes it impossible to create an exhaustive list. However, to get a better understanding, it can be helpful to note a few things.
For one, all the substitutes we’ve mentioned thus far can be combined and used in various ways together. Many products that individuals can find at stores, such as plant-based frozen nuggets, may contain combinations of vital wheat gluten and soy—making them akin to both tofu and seitan. What’s more, people have found many creative ways to reframe typical foods in meat-like ways, whether for fun or because they were craving a certain dish. Some popular ones that have trended on social media include:
Plant-based meat alternatives seem to be exploding in popularity recently; while many people might opt to abstain from meat, many others simply are drawn to these low- cholesterol alternatives to some of their favorite dishes or are interested in trying out new types of foods and expanding their palettes.
Whatever the reason, there are a ton of tasty dishes out there just waiting to be made! Whether you’re going to start with the blank canvas of tofu and perfect your masterpiece, or you’re interested in working with the hearty flavors of tempeh to create an incredible smoky piece of art, remember: seasoning is key.

The legacy of Jamaican jerk seasoning is a testament to the rich cultural tapestry of the Caribbean and its ability to unite people through the shared love of food. Each bite carries a history honoring the fusion of the African and indigenous Taíno cultures in Jamaica. The burst of flavors tells a story of resilience, a quest for freedom, and innovation.
The Taíno, an Arawak people from South America who became native to the Caribbean, were the island's original inhabitants. They developed a method that preserved the meat and infused it with a unique blend of flavors that would soon become synonymous with jerk cuisine.
As history unfolded, the Caribbean region saw waves of cultural influences, from European colonialists to enslaved Africans who escaped and took refuge in the island's rugged mountains. They formed a community known as the Maroons and forged connections with the surviving Taíno community, sharing culinary customs, such as jerk seasoning.
The Taino method of slow-cooking meat over a wood fire was refined into the quintessential jerk cooking technique. The Taino and the Maroons originally cooked their meat in smokeless pits to evade being discovered in the mountain regions above the plantations where the Maroons had previously been enslaved.
The unique aspect of jerk seasoning is its distinctive smoky flavor, derived from the use of pimento wood obtained from the Jamaican allspice tree. The slow smoking infuses the meat and results in tender, juicy, and flavorful bites.
As tourism and international interest in Caribbean cuisine grew, so did the popularity of jerk seasoning. From humble beginnings prepared by street vendors and enjoyed by communities throughout the island, today, you can find jerk-spiced dishes gracing menus worldwide.
The art of making Jamaican jerk seasoning can be achieved through the perfect balance of fiery heat, aromatic herbs, and the rich tapestry of spices. As these ingredients converge, the result is a harmonious and multidimensional flavor profile that's uniquely Jamaican.

Celery salt
Mace or nutmeg
Mustard powder

Who doesn’t love juicy, tender meat that’s just bursting with flavor? If you want to get the best flavor into your meat, you may want to try dry brining. In today’s article, we’re going to share what dry brining is, how to do it, and give you all of the best tips and secrets for perfecting the flavor of your dry brine.
Featured Image of Dry Brined Tomahawk Steaks by FreshJax Friend Marc (@ales.n.tails)
Dry brining is a method of seasoning and tenderizing meat, primarily poultry, by applying salt and sometimes other spices directly to the meat's surface and letting it rest in the refrigerator for a period of time before cooking. Unlike traditional wet brining, which involves submerging meat in a liquid solution, dry brining uses only dry ingredients to achieve similar results. It’s faster, easier to clean up, and produces amazing results for very little effort.
Here’s how you dry brine meat. It’s as easy as 1, 2, 3– and most of the work takes place in your fridge without any effort from you!
Generously coat the meat's surface with salt. It’s important to get a good coating because the salt is going to draw out moisture to create the brine. You can also add other dry seasonings, such as herbs, spices, aromatics, or even seasoning blends, depending on your preference.
Place the seasoned meat on a plate, tray, or other dish. Let it sit uncovered in the refrigerator for at least a few hours– bigger pieces of meat need more time. If you’re seasoning something really big, like a whole turkey or an uncut beef tenderloin, you may want to leave it in the fridge overnight.
During this time, the magic of dry brining happens. The salt draws out moisture from the meat's surface through osmosis. It then dissolves and forms a brine that then gets reabsorbed by the meat. This process not only seasons the meat but also enhances its flavor and juiciness. The reabsorbed brine essentially seasons the meat from the inside out, resulting in a more flavorful and tender final product.
After the dry brining period is complete, you can cook the meat as you normally would. The dry-brined meat tends to cook more evenly and retain its moisture better, resulting in a juicy and flavorful end product.
Dry brining is particularly popular for preparing poultry, such as chicken and turkey, as it helps to improve the meat's texture and flavor. It also creates a crispy skin when roasted due to the moisture removal process. However, this method can also be applied to other types of meat, such as pork or beef, to achieve similar benefits.
Keep in mind that while dry brining can be a great technique for enhancing the quality of your meat, it's important not to overdo the salt, as this could lead to overly salty results. It's a good idea to experiment with the amount of salt and seasonings you use to find the right balance for your taste preferences.
The type of salt you use can vary, too. Many dry brine recipes start with kosher salt, but you can experiment with your favorite types of salt. Seasoned salts, like flavored salts or smoked salt, can elevate your dry-brined meat’s flavor profile
The type and quality of the spices you use determine the outcome of your dry brine. Any spice or spice blend can be part of a dry brine recipe, so think about the flavors you want and how they’ll combine with the natural flavor of the meat. In addition to salt, here’s a handful of the most popular spices used in dry brining.
Black Pepper– goes great with anything
Rosemary– goes best with poultry, lamb, and pork
Thyme– can be used with chicken, turkey, beef, lamb, and pork
Sage– excellent with pork and poultry
Garlic Granules– perfect for every meat, and doesn’t have the risk of burning that fresh garlic might when cooked at high heat
Onion Granules– a universal favorite on any type of meat
Paprika– great on chicken and pork
Chipotle Powder– the right touch for any dry brine that needs a little heat
Oregano– oregano’s strong flavor pairs well with beef, lamb, and even some poultry dishes
You can also use your favorite seasoning blends, like a zesty Italian spice blend or a complex citrus pepper blend, to dry brine your meat. Just make sure that you’re paying attention to the salt content of your blend– a seasoning blend with a lot of salt added to the salt from the dry brine can lead to an overwhelmingly salty dish!
Using organic spices for dry brining can offer several potential benefits, both in terms of flavor and health considerations.
One of the biggest advantages of organic spices is flavor. Organic spices often have a more intense and vibrant flavor compared to conventionally grown spices. This is because they are typically grown in healthier soil with natural and sustainable farming practices.
Additionally, organic spices are typically grown without the use of synthetic pesticides, herbicides, and genetically modified organisms (GMOs). This can result in a higher quality product with fewer chemical residues. When dry brining, you want the spices to infuse the meat with their flavors, and using organic spices can help achieve a more pronounced and appealing taste.
Organic spices are also less likely to contain artificial additives, preservatives, or flavor enhancers. This keeps any unwanted or artificial flavors out of the flavor profile of your finished dish, and lets the natural flavors of the meat shine through.
If you decide to use organic spices for dry brining, be sure to store them properly to maintain their freshness and potency. Always read labels and purchase from reputable sources to ensure that you are indeed getting certified organic products.

If you love to sweeten your coffee, bake delicious batches of cookies, or use sugar to make just about anything, you’ll want to know more about the up-and-coming sugar alternative, sucanat. Among all the sweet, sugary organic spices out there, sucanat is just now coming into its own. As a more natural alternative to other sugars, sucanat is the perfect choice for a mineral-packed sweetener in all kinds of foods, including vegan dishes.
In this article, we’ll walk you through what this strange and wonderful sweetener is, how it’s made, what it tastes like, how it’s different from other sugars, and how you can use it to make healthy, all-natural sweet dishes. Are you ready? Let’s go!
Also: Huge Shout-Out to our FreshJax Friend Steve for providing the photos for this article. This is the ACTUAL cake he made this weekend. It was delicious…
Sucanat is short for the French “sucre de canne naturel,” which means “natural sugar cane.” The name comes from how it is processed, but we’ll get into that in a minute. Sucanat was initially introduced in 1978 by a Swiss company, Pronatec, as a natural sweetener and an alternative to sugar. It is made from sugarcane, as many other sugars are, but is less processed.
Sucanat retains the molasses that naturally occurs in sugarcane, thanks to the use of fewer processing steps, meaning the end result has a soft brown color and a more robust flavor than regular white sugar. Additionally, the processing methods are more environmentally friendly. Speaking of which, let’s talk a bit about how sucanat is made.
Making sucanat begins by collecting sugarcane and crushing it. The juice is then extracted from the sugarcane and boiled. As it cools, it forms little brown crystals, which are the sucanat. It’s that simple!
To clarify how simple the processing of sucanat is, let’s compare it to the processing of traditional white sugar. White sugar is made by collecting and crushing sugarcane, the same as sucanat. Then, the juice is extracted and boiled. The crystals that form and the liquid, which is molasses, are divided, and the crystals are then moved for further processing. Next, the crystals are boiled and liquified again to remove the rest of the remaining molasses. Finally, the crystals are separated, dried, and ground into fine, regular crystals. This means white sugar goes through twice the processing of sucanat!
But what does this unrefined sugar taste like? Well, the way sucanat is processed means that the natural molasses in the sugarcane remains in it, unlike how the molasses is processed out of white sugar. This means that sucanat has a richer, stronger flavor than other sugars. It has a smoky caramel-like taste, with 13% molasses, while even dark brown sugar only has 6.5% molasses.
Moreover, sucanat has larger crystals, which might not dissolve as quickly as other sugars and one teaspoon of sucanat will have slightly less sugar than a teaspoon of brown or white sugar. On the other hand, because sucanat has a more robust flavor, you may need to use less of it as a sweetener.
Let’s compare sucanat and white sugar in their nutritional value. First of all, as sucanat retains that molasses, it also contains the minerals found in molasses. So, you can find calcium, magnesium, potassium, and iron in sucanat, while white sugar has had all of those minerals processed out of it. Likewise, sucanat is only 88% sucrose, while white sugar is 99%.
More than this, sucanat and other unrefined sugars possess flavonoid and polyphenolic compounds, which means sucanat has potential antioxidant properties. White sugar does not include these compounds. In general, however, sucanat is still a sugar and should be consumed in moderation.
How does sucanat compare with other sugars? Let’s take a look.
Compared to turbinado sugar, sucanat still has a higher molasses content. While turbinado sugar has some molasses in it, sucanat is purer. Additionally, turbinado sugar has been refined to produce a clear gold-colored crystal, while sucanat has a grainier, more opaque look. Nutritionally, turbinado sugar is quite similar to white sugar–only it has a trace amount of molasses and minerals.
If we compare sucanat with brown sugar, light or dark, we still have the processing to think of. Brown sugar is made from white sugar that has had its molasses added back into it, but even here, it still contains less molasses than sucanat. Again, that means fewer minerals and potential antioxidants.
Now that you know what sucanat is, here’s how to use it. Sucanat can be used as an alternative to other sugars in most recipes. However, you won’t want to use it as a one-to-one substitute. This is because sucanat has a coarser texture and more powerful flavor than pretty much any other sugar. So, depending on the use, you may need to use more or less, and you will want only to use it where a strong, caramel-like flavor is desired.
You can use sucanat as a sweetener for beverages like:
In these cases, try using the same amount, or slightly less, of sucanat as you would regular white sugar. You can easily taste the beverage to ensure it has the sweetness you like, and add more sucanat if necessary.
Using sucanat in baked goods is a phenomenal idea. Try it in:
In most baked goods, that stronger caramel flavor of sucanat will bring them up a notch. The only time you won’t want to use sucanat for baking is when you’re making something that needs a delicate, soft sweetener and where that molasses touch would be too much.
When baking with sucanat, it is recommended to use 3 tbsp of it for every 2 tbsp of white or brown sugar in a recipe. Additionally, since the crystals are larger, it’s a good idea to grind them up more in a spice grinder if possible. This ensures that the sucanat melts and blends evenly into the recipe.
If this guide to organic sucanat has piqued your interest in this unrefined sugar, check out our sucanat and other delicious spices at FreshJax! Our sucanat is organic, vegan, non-GMO, and is made from pure dried sugarcane juice. Try it in your next cup of coffee today!

If you’re partial to Asian cooking, you may have come across an ingredient called galangal during your search for new recipes to try. Upon looking for information about this organic spice, you may also assume that galangal is a fancier word for ginger. Though both roots are part of the same family, which also includes turmeric, there are several differences between the two.
In this article, we’ll cover what galangal is, how it differs from ginger, and how to use it in Asian cuisine.
Galangal is a root that resembles ginger, which is likely why this ingredient is also known as Thai ginger. However, there are differences between galangal and ginger, which will be covered later in this article.
Galangal is frequently used in Asian cuisine, such as dishes from Malaysia, Cambodia, Vietnam, Indonesia, and Thailand.
The basic differences between the two roots are the texture, scent, and color. Galangal is tougher, more fragrant, and paler in color than ginger.
There are three main types of galangal, known as light galangal, lesser galangal, and greater galangal. The lesser version originates from China and has a more tart, peppery flavor than the others. Greater galangal is more mild in flavor, and the plant that this root belongs to tends to be taller than other galangal types. Greater galangal is grown in Indonesia, namely on Java Island. Light galangal is grown in Southeast India and this type is the most similar to traditional ginger. As such, it’s the most common of the three types.
In addition to the three varieties of galangal, this herb can also come in both fresh and dried preparations. The fresh version, as with most fresh organic spices and herbs, is more flavorful and robust than the dried version. Dried galangal is also quite flavorful, but it tends to pale in comparison with a fresh product.
There are several similarities between ginger and galangal, which can make it difficult to tell the two apart. However, when you know which differences to look for, it becomes easier to determine which herb you’re looking at.
Both herbs are rhizomes in the ginger (Zingiberaceae) family, which are root-like segments of a plant. These roots can be used to grow new plants for both root types.
The key difference between ginger and galangal is the flavor. Ginger has a pungent, spicy, somewhat sweet taste while galangal has a citric, almost pine-like flavor. Each herb has its own recipe applications so ginger and galangal should not be used interchangeably.
On top of the spicy, robust flavor of galangal, eating this herb may also present several health benefits. In fact, the galangal root has been used in Eastern medicine for millennia as a remedy for certain health conditions.
According to studies, some of the benefits that come from eating galangal may include:
Preparing and cooking galangal is much like preparing and cooking ginger. The herb needs to be peeled with a paring knife or vegetable peeler. From there, the galangal should be cut into very thin slices, grated, or minced. This is because the herb is dense, relatively dry, and can be difficult to chew when sliced too thick.
Dried or powdered galangal is easier to prepare and cook with, as this form only needs to be measured out with a measuring spoon or cup and added to existing recipes. Though the dried version is a little more muted, galangal is still a strong spice, so even if you’re using the dried variety, use only a small amount and taste what you’re cooking frequently to ensure the right mixture.
FreshJax Carries Galangal as one of our Single-Ingredient Spices. We are very proud to say that these Certified Organic Spices are exactly what we call them: Single-Ingredient. They contain no fillers, no preservatives, no dyes, and no radiation (we can't believe we even need to say that, but…)
And why don't we include any of those things?
BECAUSE WHOLESOME IS EVERYTHING.
Traditionally, galangal is used in curries, sauces, soups, and stir-fries. However, many Asian dishes call for galangal, so you’ll likely find quite a few Asian recipes that include galangal in their list of ingredients.
Common dishes that use galangal include:
If you use fresh galangal for cooking, you probably want to find an effective way to store what you have left. One of the best ways to store your organic spices is by lining the inside of a plastic bag with paper towels, then placing the leftover root into the bag and sealing it. Galangal can be stored this way for up to three weeks if it’s kept in the refrigerator.
Another option is to slice the remains of your galangal root into thin pieces, then either seal them in an airtight container or plastic bag. This method can keep your leftovers fresh for up to two months if you store the bag in your freezer.
Dried galangal is the easiest to store, as it only needs to be covered and kept in a cool, dry place. If your galangal is powdered, keep it stored in an airtight container, as this will help keep it as fresh as possible for up to a year.
Galangal is relatively easy to prepare and cook with, so long as you carefully gauge how much of the herb you’re adding to your Asian cuisine dishes. Feel free to experiment with galangal in other foods. You might find that the addition of galangal takes many of your savory recipes to the next level.

Salt has been a staple in cooking for as far back as humans have been cooking. The oldest known town in Europe, Solnitsata, flourished thousands of years ago around its salt production. From salting meats for preservation to adding salt to nearly every dish, this mineral has become a vital part of human life.
Salt’s binding, stabilizing, and flavor-enhancing properties make it perfect for every dish. But did you know that plain salt isn’t the only kind there is? For even more flavor and a hint of the unique, say hello to smoked salt.
Among all the flavored salts and organic spices in the world, smoked salt takes its place at the top. Let’s explore smoked salt, what it is, the types that exist, how it’s made, what it’s good on, and how you can use it to boost your next delicious recipe. Read on!
First of all, what exactly is smoked salt? We’re glad you asked. While you might be surprised by this, the definition is in the title! Smoked salt is simply any kind of salt that has been smoked. To elaborate, it is a type of seasoning used mainly in savory dishes that adds a natural, smoky flavor to the food.
Smoked salt is not the same as flavored salt. The first is made with natural smoking processes, while the latter is flavored using liquid or artificial additives. Additionally, in most cases, smoked salt is made from either kosher salt, coarse sea salt, or Himalayan pink salt, all of which capture the flavor and aroma of smoke very well.
If you were to pick up a bottle of smoked salt and smell it, you’d instantly be transported to a beach or a log cabin. Smoked salt traps that scent and flavor of wood smoke in every grain, meaning whatever you add it to will taste like it came straight out of the smokehouse.
Like flavored salts and other organic spices, smoked salt comes in different varieties. Every variety is made from one of two processes and with a specific type of wood. Each type of wood used will impart a unique smoke flavor to the salt. Here are some of the most popular smoked salt varieties:
Applewood: This smoked salt is made from the smoke of burnt wood from apple trees. It is a soft, delicate salt with a woody, fruity, and slightly sweet aroma. Most use it in veggie, fish, and poultry dishes.
Hickory: Smoked salt made with hickory smoke is an intense, sweet-savory smoked salt. The aroma and flavor are thick, as it were, with smoke, making it perfect for red meat dishes, like burgers, steaks, ribs, or anything that could use a lot of smoke.
Cherrywood: Cherrywood smoked salt packs that ideal beach-front flavor. The smoke is just right, with a robust, woody flavor that makes any dish taste like it was made on an open fire. Cherrywood smoked salt is delicious on everything from poultry, potatoes, fish, steak, and more.
Alderwood: This smoked salt is made from red alder wood smoke, which is a traditional smoking wood used by several Native American tribes. It is a balanced smoked salt that can be used on just about anything.
Mesquite: Mesquite smoked salt is probably the most unique of the flavors, as it imparts a smoky, sweet, salty taste that is the icon of Texas BBQ. It’s exquisite on anything grilled. It is an integral part of our fan-favorite Mesquite Lime Sea Salt Rub.
Now that you know what smoked salt is and the varieties you can find, you’re probably wondering how it’s made. It turns out that there are only two processes for smoking salt–hot smoked and cold smoked. For either method, the salt is allowed to capture all of that smoky flavor for anywhere from a few hours to up to two weeks while the wood burns slowly.
The hot-smoked method uses a grill heated to 275℉. The salt then sits in the wood-burning, smoky grill for as many hours as needed. The longer it sits, the more intense the smoky flavor.
Cold-smoked salts are made with a grill and cold smoker. The heat reaches no more than 80℉. Under this method, since it is on low heat, the wood burns very slowly, and even more of the wood-bark flavors are captured in the salt.
Like any salt, smoked salt can be used in a huge variety of dishes. Most commonly, it is used for grilled meats. A New York steak with some Hickory smoked salt could be a recipe that changes your viewpoint on steak altogether. You know those rather plain-tasting pork chops? Try adding a dash of Cherrywood smoked salt. You might just find a new favorite meal.
Smoked salts are also delicious on roasted vegetables, in stews and soups, and even as a garnish on a grilled cheese sandwich.
The next time you make a margarita or a cocktail, try adding some smoked salt to the rim of the glass.
If you like non-traditional desserts, smoked salts are delicious in a salted caramel sauce, a roasted balsamic-strawberry cake, or in a smoky maple syrup.
Our FreshJax Friend Amanda (@HappyBakeDay) made these AMAZING S'mores with our Campfire Smoked Salt. They definitely lived up to their name and I ate S'more than I should have…
The biggest thing to keep in mind about smoked salts before using them in a dish is that they are salts. This means that they should only be used where you might use salt. Additionally, because of the intensity of the smoke and the saltiness, you only need to use a small amount to get a big flavor boost.
Smoked salts can be used as a rub for meats before grilling, or you can make a rub for meats that will be roasted, slow-cooked, pan-fried, or boiled to impart that smoky, grilled flavor without the hassle of actually grilling it first.
Wherever you use smoked salts, use them sparingly, and be sure to rub or mix them into the meat or dish so you don’t get any overly salty bites. Smoked salts can be used before cooking or as a finishing garnish, and you’ll get the same intense flavor either way.
If you’re searching for some smoked salts to try in your next recipe, check out our line of organic spices and flavored and smoked salts at FreshJax. We offer organic, natural, chef-quality spices and salts for your kitchen. Find your new favorite smoked salt today!

Lavender is an herb. It comes from the mint family and is related to rosemary, sage, and thyme. Lavender is well known for its beautiful violet flower and green leaves, lesser known are that both the flowers and leaves of the lavender plant are edible. They have a pleasant, slightly bitter flavor. Lavender is commonly grown in the United States, Australia, and Europe. Dried lavender contains very few calories per tablespoon. It is fat and cholesterol-free and widely used in many research-based herbal remedies.
Culinary-grade lavender is recommended for recipes and can be found online and in grocery stores. As a culinary ingredient, lavender works well with savory or sweet, fruity dishes as an herb or flavor infusion.
Lavender sugar is granulated sugar of varying types infused with lavender flowers. Sugar is infused with fresh or dried lavender flowers; over time, the sugar takes on lavender's flavor and subtle aroma. It has a sweet, floral flavor with notes of lemon and citrus. It uses regular white, granulated sugar, brown sugar, or maple sugar. Any form of granulated sugar can be infused with lavender.
This floral sugar is versatile! Lavender Sugar is excellent in various dishes adding a unique flavor and a touch of elegance!
Baking with lavender sugar adds subtle floral notes to baked goods. Cookies, cakes, muffins, and scones work well with the flavor of lavender. It can be used as a one-to-one replacement for regular sugar in most recipes, but lavender may only pair well with some flavor profiles.
Lavender complements lemon, vanilla, and berries, enhancing the natural sweetness of each and adding an element of surprise and elegance to baked goods. Due to its versatility and citrusy notes, lavender sugar is excellent for culinary curiosity. It allows for experimentation and creativity in the kitchen, for example, dusting the top of baked goods or adding it into frosting, glazes, or fillings.
Other desserts that work well with lavender sugar include sorbet, ice cream, and custard dishes like Crème Brûlée and Jams and Jellies. Replacing regular sugar with lavender sugar when making these desserts will add the flavor of lavender, enhancing the dish and creating a delightful surprise for family and friends.
Cocktail creations are perfectly suited for adding the captivating essence of lavender sugar. Classic cocktails and innovative concoctions benefit from the added complexity of lavender sugar. Replacing regular sugar or simple syrup with lavender will add floral notes that work well with spirits like gin, vodka, or whiskey.
Lavender-infused gin and tonic is a refreshing, sophisticated option. Or creating a lavender simply syrup can add depth to many cocktails, including lavender martinis or spritzers. A fresh sprig of lavender is a beautiful addition to lavender-infused cocktails.
Lavender simple syrup is easy to make using a basic simple syrup recipe and lavender sugar. With equal water and sugar, boil over low heat and simmer until syrupy. Remove the syrup from the heat to cool for about an hour. For an extra eye-catching presentation, you can add purple coloring. Lavender syrup made this way will typically last several weeks when refrigerated and sealed.
Lavender syrup can be used in cocktails and other drinks, frosting recipes, and added to whip cream. It can also be used on its own as a pancake syrup or ice cream topping. You can make a lavender-flavored soda-style drink by adding syrup to sparkling water. The lavender syrup also makes a great hostess gift when presented in a beautiful bottle with some lavender sprigs attached.
Lavender pairs well with many foods and is often used with herbs like rosemary, marjoram, savory, and oregano. As a culinary seasoning, lavender alone is often used with rich, fatty meats or sprinkled on roasted veggies. Lavender sugar can also be incorporated into certain savory dishes, although used sparingly due to its sweetness. Some dishes containing sugar that can be enhanced with lavender sugar include tomato-based sauces, salad dressings, barbeque sauce, caramelized onions, and glazes for meats.
You can infuse hot or cold beverages, like tea and lemonade, with lavender using lavender sugar. Replacing regular sugar with lavender sugar will instantly add the subtle flavor and aroma of lavender to your drinks.
Balance the Flavor: Lavender is strong and can quickly become overbearing. Using it sparingly at first and balancing it with other ingredients is important. Start with a little, then add more!
Use Culinary Grade Lavender: Culinary-grade lavender is specifically grown and processed for culinary purposes and, therefore, safe for consumption.
Experiment with Sweet and Savory: Although commonly associated with sweet dishes, lavender is an excellent choice for savory recipes like roasted meats, sauces, and dressings.

Adding spices to beer has a long history dating back over 8,000 years. Today, experimenting with organic spices in your homebrew can take your beer to new heights, infusing it with unique aromas, flavors, and complexity.
Homebrewing is an exciting and rewarding hobby, but it requires more than just carefully timed fermentation and a high-quality brew kit. The secret to brewing a truly exceptional craft beer lies in your choice of clean ingredients.
In this post, we'll explore 10 essential spices every homebrewer needs to elevate their beer and take it to the next level. Get ready to unleash your creativity and brew a beer that tantalizes your taste buds!
For a warm, spicy, slightly sweet flavor profile, cinnamon enhances the complexity and depth of your brew.
It pairs exceptionally well with darker beer styles.
Incorporate a few cinnamon sticks in the fermenter during the last 10 minutes of the boil or the secondary aging phase. Or, you can create a cinnamon extract and add it to the beer during bottling. Cinnamon can be a powerful spice, so start with a conservative amount and adjust to taste.
Known for its zesty, slightly peppery taste and subtle earthy, citrusy aroma, ginger can bring a refreshing and invigorating twist to your brews.
Its vibrant character can complement various beer styles.
Add grated fresh ginger to the last 10-15 minutes of the boil or incorporate dried ginger during fermentation, either in the primary or secondary stage, for a subtle kick. Adjust the quantity of ginger used for your desired intensity.
Bringing a warm and aromatic character to the brew, nutmeg imparts a distinct spiciness with hints of sweetness and earthiness, creating a harmonious balance of flavors.
This versatile spice can enhance beer styles that embrace malt-forward profiles and winter-themed brews.
Add a small amount of nutmeg during the bottling or kegging process. Allow a few weeks for the flavors to meld and the nutmeg’s essence to infuse into the brew.
For an exciting twist to traditional beer styles, cardamom, with its warm and spicy aroma, imparts an earthy and citrusy flavor profile with hints of pine and herbal undertones.
Cardamom complements a range of beers in the following unique ways.
Crush the cardamom pods or use pre-ground organic cardamom and add it during the last few minutes of the boil or fermentation.
Intensely aromatic and spicy, homebrewing craft beer with cloves adds a delightful twist to the flavor profile, infusing it with warm notes.
Cloves bring a unique spiciness and a hint of sweetness that help balance and work best with darker and fuller-bodied beers.
Start with a solid base beer recipe of your choice. During the brewing process, add whole cloves to the boil or steep them in the fermenter to extract their flavors. Use cloves sparingly.
Add a touch of exoticism to your brew! Fenugreek seed is known for its earthy, nutty, and slightly sweet taste, with hints of maple syrup and caramel.
Fenugreek Seed pairs particularly well with beer styles with robust malt profiles, adding subtle sweetness and complexity to their character.
Add a muslin or hop bag of fenugreek seed to the boil for 10 to 15 minutes before flame-out, allowing the flavors to infuse into the wort. Remove the bag before fermentation.
Add a fresh, citrusy, and slightly spicy note to wheat beers and Belgian-style ales with coriander. It helps create a refreshing and complex flavor profile that enhances the overall balance and drinkability of the beer
Crush the seeds and add them to the boil or during fermentation to infuse your brew with a delicate herbal character. Coriander pairs exceptionally well with orange peel, creating a harmonious combination of flavors.
As its name suggests, allspice encompasses a warm and aromatic flavor profile reminiscent of cinnamon, nutmeg, and cloves. It brings a spicy and slightly sweet character to the beer.
Its complexity and depth make it an excellent addition to darker styles and winter and holiday-themed beers that can benefit from comforting spiciness and warmth.
To achieve a distinct flavor profile, use whole allspice berries or ground organic allspice during the boil or fermentation.
Derived from fruits like oranges, lemons, or grapefruits, citrus peels, and zest bring a bright aroma and a tangy taste to your beer for a refreshing twist.
The possibilities of beers that pair well with citrus are abundant.
To brew with citrus peels or zest, organic ingredients are preferred. Citrus is versatile and can be added during different stages of the brewing process.
For those seeking a spicy kick, chili peppers can add heat and complexity to your beer, whether you prefer the subtle warmth of jalapeños or the fiery punch of habaneros.
The possibilities are diverse for pairing beer styles with the heat of chili peppers.
Add deseeded and chopped peppers to the boil or create a tincture using organic smoked chili flakes and vodka. Add it during secondary fermentation to control the heat level.
With the 10 essential spices mentioned above, you can craft unique, tasty beers that’ll impress your friends and fellow beer enthusiasts. Remember, balance is key when using organic spices, so start with small amounts and adjust according to your taste preferences.

Ingredients:
2 medium onions (thinly sliced)
2 medium tomatoes (finely chopped)
2 tsp of garlic paste
Half of a dry coconut
5-6 whole black peppercorns
1-2 green chilies
Fresh coriander
2 tsp whole spice powder (cinnamon, cardamom, cloves, black pepper, and star anise)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp FreshJax Not Your Madra's® hot red curry powder
2 tsp cumin powder
2 tsp coriander powder
4 lobsters (cut and cleaned)
3-4 tablespoons of oil
Salt (to taste)
Directions:
Grind the dry coconut, green chilies, fresh coriander, and whole black peppercorns with a little water to make a smooth paste. Keep it aside.
Heat oil in a pot and add the chopped onions to it. When the onions have softened and become translucent, add the garlic paste. Stir and heat until the rawness of the garlic fades away. Then add the chopped tomatoes. You may lower the flame and cover the pot at this point to soften the tomatoes. After a bit, uncover and lightly mash the tomatoes.
Now it’s time to add in the ground paste and all the remaining ingredients except the lobster. You may add just enough water to ensure that the mixture does not stick to the bottom of the pot. Stir and cook for another 2-3 minutes.
The mixture is now ready for the lobsters. The lobster meat will release flavourful juices as it cooks, so make sure not to dilute it with too much water. Let the lobster curry cook on a low-to-medium flame for 10-15 minutes. Switch off and garnish with chopped fresh coriander. Serve it with some vegetable rice or wholegrain bread.

A staple of Asian American and Pacific Islander cuisine is turmeric, a spice known for its anti-inflammatory properties. Turmeric can be included in various food and drink recipes to provide a pleasant, slight bitterness and enhance the flavor of the other ingredients. As part of the ginger family, turmeric is integral to the earthiness that comes through in Asian American and Pacific Islander cuisine.
Turmeric can be used in many recipes, such as this delicious Fijian Fish Curry. However, it’s an incredibly versatile spice you can add to anything, from your morning cup of coffee to a delicious homemade chili.
We recently learned a thing or two about curries, but there is always more to know! Curries really are a worldwide phenomenon!
Ginger's distinct–and delicious–flavor makes it an excellent addition to many recipes. Ginger has a bold, aromatic flavor and a spicy kick to make an impact on anyone who tastes it. It is an incredibly flexible spice used in numerous Pacific Island dishes to add a warm flavor and a spicy aftertaste in sweet and savory recipes.

Garlic is a given in most kitchens and adds an irresistible flavor to many recipes and a pungent and savory flavor commonly found in cuisines like Hawaiian food. The versatile bay leaf can be found in different recipes across a plethora of Asian American and Pacific Islander cuisine. Bay leaves originate from laurel trees and have a somewhat minty, mild flavor with an earthy bitterness typical of this cuisine.
Bay leaves are perfect for various recipes and can add a unique flavor to dishes like soups, potatoes, sauces, veggies, teas, stews, and shellfish. Subtle hints of pine and pepper help to balance rich dishes that would be too heavy otherwise. If you want to start incorporating bay leaves into your cooking this month, try this Filipino Adobong Manok (marinated chicken) recipe we love!
Adding some extra citrus to your dish can make a massive–and welcome–difference in the overall flavor. Lemon zest has a tasty citrus flavor without as much bitterness as you’d find in lemon peel. Lemon zest is perfect for capturing the lemon taste without getting all of the acidity in the mix.
Lemon zest is also popular in traditional Asian American and Pacific Islander recipes, making it a helpful seasoning to have by your side this month. Use delicious, organic lemon zest in recipes like this delicious chicken stir fry with vegetables.

Here at FreshJax we believe that healthy eating and tasty eating go hand in hand. So while we try not to eat too many sweets... we also don't shy away from them. You may not use all of the ingredients below all of the time, but these are the spices we think you should at least be familiar with:
The most essential spices to have in the kitchen might be salt and pepper. However, after that, cinnamon may be the most vital spice to have in your culinary tool belt. In the United States, many people learn how to bake with cinnamon as an ingredient in sweet dishes.
Cinnamon is the perfect way to bring an extra depth of flavor to cookies, cakes, sweet breads, and other desserts. Other cultures also use cinnamon in sweet dishes like baklava, churros, and rice pudding.
However, some types of spices that we use in sweet dishes in the United States are used in very different ways in other cultures. Many cultures have also found amazing ways to use cinnamon to add flavor to savory dishes.
In Indian cuisine, cinnamon is a popular choice for savory meat dishes. You can also try cinnamon in eggplant dishes and savory stews.
Many people are interested in finding healthy spices to add flavor and promote health in the body at the same time.
Many cultures have recommended cinnamon for centuries to help people strengthen their bodies. These days, science has even confirmed that cinnamon is a great way to help lower blood sugar levels.
In general, it is best to use organic spices, especially if you are interested in their healthful properties. Quality cinnamon is full of antioxidants that may also be able to help bring down general inflammation around the body.
If you prefer your baking spices with a milder, more subtle flavor you might consider trying a Ceylon Cinnamon. We think it's pretty tasty. 😉 And for the curious we wrote up a little post about it HERE
Star anise is a seed pod from Southern China. It has a warm flavor that some people compared to licorice and is one of the five ingredients in the famous Chinese five-spice blend.
You can use it in soups and sauces, but the longer you leave it in, the more it will alter the flavor of the dish. In most cases, it is important to remember to take the start anise out before too long.
Some people say that star anise is a powerful spice for helping alleviate respiratory issues.
Ginger is a great baking spice for things like gingerbread and ginger cookies. You can also add ginger to tea with honey to make a calming and refreshing beverage.
If you want to use ginger in dessert items, you might want to find candied ginger. This type of ginger is prepared in sugar syrup and is especially tender.
Around the world, different cultures also use ginger in curry, soups, and fish and meat dishes. It is also one of the best spices for helping to relieve nausea and muscle soreness. Some people also say that it works great for helping to bring down their cholesterol levels.
Nutmeg is a seed that is ground into a powder before being used for baking and cooking. Almost any dish you can add cinnamon to is also a good candidate for nutmeg. It is a great choice in putting, eggnog, desserts, and baked goods.
However, nutmeg is also used in savory dishes like potatoes, sausage, and vegetable dishes. It can also be a powerful spice for helping to relieve pain and help people get to sleep.
However, it is so potent that is important to enjoy nutmeg in moderate doses. Taken in extreme quantities, nutmeg can cause nausea.
Allspice is a single spice, but it gets its name from the fact that it tastes like many other common spices but together. Some people say that allspice tastes like cinnamon mixed with nutmeg and cloves. As a result, any dish that uses nutmeg and cinnamon is a good candidate for allspice.
Some cuisines also add allspice to seasonings for marinating meat. Some cultures also recommend allspice for alleviating stomach pains and promoting healthy digestion. In Asia, some people believe that allspice can help warm the body and reduce inflammation.
Some people think of vanilla ice cream as a basic version of ice cream without much flavor. However, vanilla comes from an exotic plant in South America. It provides a delicious flavor that goes perfectly with a wide variety of sweet dishes.
Some cultures also use vanilla for its purported calming properties and say that it can help uplift distressed moods. It is also a popular choice for aromatherapy.

Learning to cook for yourself is one of the most rewarding things you can do in your adult life. You get to indulge in your favorite recipes, enhance your cooking skills, and save a ton of money from eating out. Experimenting with herbs and spices is a fun part of it, but you may have tried a new recipe and found that the spices were lacking.
You may look back at your spice rack and realize some have been sitting there for months. So, that begs the question: how long do spices stay fresh?
This article covers everything you need to know about your spices and how to keep their flavor. Read on to find out more!
Table of content
How long do seasonings stay fresh, and can they go rancid? The answer is yes, but not in the way you might think. Spices don't expire the same way milk and meat do.
Spices are a shelf-stable product, and you won't find an expiration date. You won't feel sick after eating "expired" paprika or cajun spice. However, they do lose their flavor the longer they sit in your kitchen cabinets.
Simply Put: Fresh will Always Taste Better.
The closest thing to an expiration date you have is the "best by" date. If you're still using spices that have gone past their peak freshness, you'll notice the difference in your dishes.
Spices undergo a long journey before reaching store shelves. During that time, the flavor will already have begun to fade. While shelf-stable, spices will oxidize and degrade when exposed to open air.
The only exception is salt, which can retain its peak flavor forever. Different types of spices have varying shelf lives. Look at your spice rack and see which ones may be due for a replacement.
Ground spices are the most convenient for home chefs. This type of spice is the one most commonly found in grocery stores.
These spices are best within their first three months of being bottled. Unfortunately, they oxidize faster because of their large surface area. However, if kept well, they will retain most of their flavor for up to three years.
Examples of Ground Spices: Paprika , Cumin, Cardamom
Keep Fresh For: 2-4 Years
Whole spices include nutmeg, cinnamon sticks, peppercorns, and whole dried chili peppers. These spices last longer than ground seasonings and stay fresh for up to four years.
Using whole spices also gives you the pleasure of grinding them yourself. This gives you more control over your dishes and allows you to produce more vibrant flavors.
Examples of Whole Spices: Bay Leaves, Peppercorns, Smoked Chili Flakes
Keep Fresh For: Up to 4 Years
Whole seeds like poppy and sesame can actually expire because of the oils in the seeds. Moist seeds like raw sesame will last up to a year in your spice rack.
On the other hand, hardy dry seeds like cumin and mustard can last up to three years. A great way to keep whole seeds fresh is to chill them. This won't affect their taste or texture.
Examples of Whole Seeds: Poppy Seeds, Black Sesame Seeds, While Sesame Seeds
Keep Fresh For: 3 Years
Cultivating an herb garden is a great way to get unlimited access to herbs like basil and thyme. If freshly picked, these green herbs will last up to a week in your refrigerator.
However, you can also buy whole dried herbs. As long as you keep them away from sunlight, these herbs will last up to three years.
Examples of Dried Herbs: Rosemary, Basil, Thyme, Marjoram
Keep Fresh For: 3 years
The easiest way to tell if a spice is still fresh is by smelling it. Rub some of your desired seasonings on your hand and take a whiff. If it has a weak aroma, it's past its peak potency.
Its color will also fade over time. The flavor will not be as potent if it looks duller than when you first bought it. If you're still not sure, taste it!
It can be hard to throw away old spices, especially when there's so much left. Fortunately, there are a few things you can do to revive or repurpose those old spices.
If your seasoning is well past its prime, empty it into a dry skillet and toast it. Place your stove on medium-low heat, and remember to keep stirring. This will help you prevent burning your seasoning.
Toasting old seasoning can help improve some of that lost aroma and flavor. Once the fragrance becomes more potent, put the toasted seasoning aside to cool. You can put it back into its old bottle after.
You can also make a spice potpourri if you're partial to aromatherapy. Some spices, like paprika and turmeric, can protect your garden from pests.
Spices don't come cheap, and even more expensive to replace them every few months. Many home cooks keep a wide variety of spices and seasoning but don't make nearly enough food to exhaust their whole collection.
No sustainable or budget-conscious cook wants to throw away unused ingredients. Here are some things you can do to increase the longevity of your spices.
Whole spices stay fresh much longer than ground spices. This can give you much more peace of mind when it comes to storing your spices. Grind what you need before you use them and store the rest without worrying about them deteriorating.
Look at your diet and your usual meal plans. Identify which spices you use the most and how much you usually use, and only purchase that much. Buying in bulk might be cheaper, but it may not be as cost-effective as you think if you don't even use them.
Store your spices in airtight containers to retain their potency for longer. These containers protect your seasonings from moisture and deterioration from the air. We also recommend keeping your spices in a dark, cool, and dry environment.
Spices stay fresh as long as you store them properly. If cooking is your passion, don't let bland seasoning get in the way of your art. Spices allow you to add more character and depth to a dish, so use these tips to keep them fresh.

Curry is a popular dish all across the world, and for good reason. It can be mild or hot, savory or sweet, and can include pretty much anything you can think of. More than a dish, the word “curry” refers to the specific combination of organic spices people make to create a flavorful sauce.
In our last article, we discussed what curry is, where it comes from, and various styles of curries and spices that you can consider making when thinking about making curry. As a dish presumed to be Indian in origin, our general guide focused on Indian-style curries. However, cultures from all over the world, including China, Japan, and Korea, also have their own, very different combinations of spices and methods of preparation to create their versions of curry spices. In this article, we will explore how curry fits into Chinese, Japanese, and Korean cuisine and their similarities and differences.
Table of content
Although the method of making curry is thought to have originated in India, its name comes from the UK, as “curry” is a British English word (it comes from the word "kari", or sauce). Additionally, though many Chinese dishes use yellow curry powder as an added flavor in vegetable, seafood, and noodle dishes, the rice and sauce dish we know as curry is actually not very popular across mainland China. Thus, although Chinese curries use Chinese-based ingredients, their origin is likely Western.
Regardless of true origins, Chinese curry has been embraced by Chinese takeout and restaurants across the globe, particularly in the UK and in the United States. Although often made with chicken, Chinese curry can also include pork, beef, or a combination of seafood, meat, and vegetables. In addition to its signature yellow curry powder, Chinese curries also include classic Chinese flavors like star anise, cinnamon, ginger, garlic, and cloves. Chinese curries will also use chilis, especially those from the Schezuan area, for spiciness. Our favorite is to add some Gochugaru Chili Flakes.
Chinese curry seasoning can be wet or dry, depending on how you prepare them. Noodle-themed dishes or stir-fries can be dry curry dishes when ordered from a takeout restaurant, whereas other Chinese curry recipes online will use cornstarch or plain flour with water to thicken their spice mix once incorporated into their dish.
Unlike in China, curry has become a well-known and cherished staple among Japanese people both within Japan and abroad. Its popularity has become a cultural icon of Japan, so much so that some Japanese consider their form of curry as a national dish.
Also unlike other curries, Japanese curries are made with a roux as its base rather than a mix of dry spices or a curry paste. This roux consists of a mix of sweet and savory ingredients to achieve an umami flavor, such as soy sauce, dashi, garlic, ginger, onions, carrots, and apples. As a result, traditional Japanese curries have a thicker consistency than Indian or other Southeast Asian curries.
Unlike spice- or coconut milk-based curry, Japanese curry is like a stew, served with rice and pickled vegetables on the side. Japanese curry also tends to be milder than other curries, although spicy versions are available. Japanese curries feature a variety of vegetables, most commonly potatoes, onions, and carrots. Pork, chicken, seafood, and tofu are all popular additions to Japanese curry as well. Because of its popularity, convenience stores, grocery stores, and even vending machines sell pre-formed curry blocks or pre-made, ready-to-eat curries.

Also stew-like in nature, Korean curry has become increasingly popular, thanks in part to the Japanese curry dish it comes from. Savory, spicy, and readily available in both commercial packages and through ingredients in grocery stores within Korea and the United States, Korean curry boasts a lot of flavor in a quick time frame.
Korean curry has similar ingredients and methods of preparation as Japanese curry but is notably spicier (and tends to be a bit heavier on the garlic). Korean curries utilize a roux as their foundation like Japanese curries to get its thick consistency. The Korean Style also utilizes a mix of savory and sweet to build its foundation: carrots, onions, and potatoes A unique combination of peppers and spices make up the base of Korean curry, often commercially sold as a paste called Ottogi curry. The name of Ottogi curry actually comes from the name of the company that sells the popular Korean curry powder, once called the Pung Lim Company. Pung Lim also makes the popular Vermont curry, available in both Japanese and Korean varieties.
Korean curry is a unique fusion of Indian and Japanese curries, with turmeric, coriander, cumin, fennel, as well as garlic, ginger, and spicy chili peppers popular in Korean pepper pastes, soybean, and even dairy products such as milk and cheese products.
Curry is a fascinating and wonderful dish, and its versatility has made it a staple across the world. No matter the region, what unites every curry dish is its variety of spices that lend themselves well to any vegetable or meat they mix with.
Which curry you choose to make varies depending on both what cuisine you want to try and what spices you have available. You can find yellow curry powder in almost every grocery store; even in a pinch, you are likely to find curry powder at your local convenience store. Some commonplace American grocery chains, like Market Basket, Price Chopper, and Walmart, also provide ready-made curry, like from the popular Vermont brand. Conversely, you will likely have to visit your local Asian grocery store or a specialty supermarket to find the ingredients for an authentic Korean curry.
Regardless of which curry you choose to make, you also should also consider your level of spice tolerance. People who dislike spice or need something quick and easy to make after a long day at work will likely find an easier time gathering the ingredients for a Japanese or even Chinese curry. People who like spice or can afford to take the time to make curries from scratch or with specialty ingredients will find satisfaction in Korean curry or adding some extra peppers to their Japanese or Chinese dishes.
Ultimately, making a successful curry dish is to be adventurous and have fun! Explore various ingredient combinations, test your spice limits, and enjoy everything the culinary world has to offer. Full of organic seasoning, colorful, and sure to please, curry dishes are sure to bring something delicious to your next meal!

In its most simple terms, curry is a sauce flavored with a mix of spices. The word “curry” today is thought more of as a method of cooking — incorporating seasonings into a flavorful and spicy sauce — rather than a single dish.
It's popularity around the world is truly owed to its versatility. Every culture has its own. They can be red, green, yellow, rice based, vegetarian, or meat-based. The possibilities are endless!
No one really knows when curry was first invented, but the particular cooking method and spice mixes have been traced back to Indian cooking in 2500 BCE, and it is thought to have spread throughout Asia and Europe as Indian Monks traveled the Silk Route. Curry was influenced by Portugal and Spain, who brought chilies to India, and has continued to evolve and become adopted by many countries over the years.
Amusingly, even though most people attribute “curries” to India, if you were to go there today, they’d likely have a hard time knowing what you were asking for. This is because the term “curry” is British in origin and was based on a misunderstood generalization.
Today curry can be found worldwide and enjoyed by people of different cultures and ethnicities everywhere.
Curry is an integral part of many cultures today, and coming up with a comprehensive list of all the places in the world that use this versatile dish would make for a very long article. So, we are not going to talk about all of the varieties of curry in the world here. We’ll focus on just talking about the two styles of this widely-known dish and offer some examples as we go.
Put simply, curries can be wet or dry. This is the easiest way to identify and classify curries, and most countries tend to lean towards one type of curry or the other in their cuisine, but many cultures utilize a mixture of both.
We will start with dry curries because “curry” is widely accepted as Indian in origin, and most Indian curries are considered dry. All this means is that they are cooked in less liquid, resulting in the vegetables and/or meat inside the curry being coated with a very flavorful sauce.
On the other hand, wet curries are very common in Thailand and are made with a much larger quantity of liquid. This results in a soupier and creamier curry than a dry curry — hence the name “wet.”
Traditional Indian curries use a blend of dry (usually ground) spices in addition to some whole spices. Most Indian families, especially South Indian families, mix their spices from scratch every time they make a dish. And unfortunately, for many people who hope to learn the secrets of making a family recipe, the number of spices that go in is rarely measured carefully.
This said, plenty of curry spice blends — such as curry powder and garam masala — can be used today to get those classic Indian curry flavors.
Now, it is important to note that dry spices or spice mixes are not the only types of “curry spice” that can be added to your curries. In fact, Thailand and many other countries are much more accustomed to using curry pastes rather than powders to form their curries. These pastes are typically made from toasting spices and grinding them to form a solid paste-like thickener to use in the typically wet style of curries that they prefer.
Curry pastes typically come in one of three colors: red, yellow, or green. These pastes differ in spice level (with green being the mildest and red being the spiciest) and flavor, so you can achieve different-tasting curries depending on which curry paste you use.
Now that you have a better understanding of what curry is and the different types of curries, you may be wondering how you can make one for yourself. There are no doubt endless tips and tricks for making curries online, but here we’re going to address some of the most important things to know about making curry.
To make an Indian, Sri Lankan, Nepali, Pakistani, or Bangladeshi (among others) curry, you’ll need to master the art of tempering your spices. This is typically the first step done in any curry and can, as we mentioned earlier, change from day to day. But, it typically utilizes the same ingredients and always uses the same technique.
You will need ghee or oil, the spices you are tempering, and a pan and stove. Typically tempered spices include:
If this looks like a long list, don’t worry! Most of the time, a single temper will only use a few spices at a time. We have added below a typical temper
For a basic temper, you will heat your pan and add the ghee and spices (cumin, coriander, mustard seeds, hingh, turmeric, curry leaves, onion, and dried red chilies), and wait until the mustard seeds start popping in the pan. This means your spices have had enough time to release their oils, and you are ready to use them.
Since the majority of the flavor of curry comes from the spices you use, you want to ensure that you are using the best spices you can find. To get a much tastier and more aromatic curry, look for high-quality, organic spices (whether using a spice mix or individual spices), and do not buy more than you will use at a time. As spices age, they lose their pungency and can even taste different.

Luckily, you don’t have to try to do it all on your own. Plenty of premade spice mixes can give you the delicious curry flavor you are looking for.

Burger seasoning is incredibly important if we want to make burgers at home. There is an art to seasoning a burger so that it tastes like it came from a professional kitchen.
We want to invest in certain types of cookware or seasoning options. This can help us to elevate our burger options and become an expert in this area.
Keep reading to find out what kind of burger seasoning tips we should be using for the perfect burger!
Want to create a mouthwatering burger? Of course, we do! And the best way to do this is where the burger seasoning options.
The Grill Master blends from FreshJax are some of the best options around. These seasoning options allow us to create a depth of flavor without having a bunch of seasonings.
Want a rich and flavorful barbecue blend? Try out the Rosy Cheeks seasoning blend that is sure to pack a bunch of flavors!
Want a classic burger that is vibrant and zesty? Look no further than the FreshJax Citrus Pepper blend that elevates any burger we have.
Unfamiliar with making burgers? Choosing a blend is your best bet. Even professionals prefer blends since they are convenient and provide the best flavors.
This is also a great way to save money since we don’t have to buy a dozen different seasonings. This gives us more money to spend on high-quality ground hamburger meat!
Another great tip for burger seasoning options is to blend seasonings. Grill Master seasonings are full of mouthwatering flavor, but we can go a step further.
We can combine different burger seasonings to create a new type of flavor. This is a great option if you want to get more adventurous and create our own recipe.
For instance, we can combine the Citrus Pepper blend with the Garlic Herb blend. This will create a bright and flavorful blend that covers all of the bases.
If we have become an expert at making burgers, we can start looking for a way to switch things up. Combining a blend is a great way to do that and try different flavor combinations.
If we prefer simple flavors, you can try organic spices for a traditional burger. All of the spices at FreshJax are organic, giving us the healthiest seasoning options.
Aside from blends, we can also find plain spices to include in our burger recipe. This includes options like garlic granules, cracked pepper, and chili flakes.
As exciting as seasoning blends are, sometimes we want something more traditional. A high-quality burger doesn’t always need a bunch of spices to taste amazing.
Sometimes the best way to create a mouthwatering burger is with a bit of garlic, salt, and pepper. Top it with a crispy bun, tomatoes, and lettuce, and we have an award-winning burger!
Something that many people failed to do is generously salt their burgers. When choosing hamburger seasonings, we may forget to use enough salt for flavor enhancement.
Salt is the backbone of a good burger, and we need them more than we might think. Most people are afraid of sodium and try to use as little salt as possible in their food.
But if we do this, we risk your burger coming out tasting flat and lacking in flavor. We need it to salt our burger more than we think so that the result is perfectly seasoned.
We need to generously salt both sides of the burger along with our other spices. Keep in mind that we don’t have to stick with plain table salt to do this.
We can try other unique options like smoked Cherrywood sea salt and Himalayan pink salt. These add the saltiness that our burger needs as well as some additional flavor.
Like generously salting our burger, we also need to add more seasonings. Many beginner cooks make the mistake of only using a small amount of burger seasoning in their burgers.
The reality is that some of these flavors are going to be cooked out before we eat the burger. Because of this, you need to add more seasonings than we think for a good final product.
Some people also choose to add seasoning blends to the burger itself. We can do this when we are mixing the meat mixture up so that it has flavor throughout.
It is also important to remember that how we cook your burger impacts the flavor. This is why cooking over a grill is the most common method for burgers.
This creates a rich and traditional flavor that most people look for in this dish. But you can also cook a burger inside over an oven grill or in a pan.
This will depend on what is accessible to us and the flavor we are going for.
Want to make burgers at home? We need burger seasoning options. A burger is not going to taste like much unless we season it generously to create that perfect bite!
The best way to do this is with seasoning blends or organic spices.

When it comes to making a great burger, the bun is a critical element that always deserves extra attention. The right type of bun can complement the other ingredients in a burger and contribute to its overall flavor and texture.
Think of the bun as the foundation of your burger—it needs to be sturdy enough to hold up to the weight of the meat and toppings but soft enough to provide a satisfying mouthfeel.
Different types of buns work best with different types of burgers. For example, a soft, fluffy brioche bun pairs perfectly with a gourmet burger with high-quality beef and artisanal cheeses. A whole wheat bun might be better for a healthier burger. And we can’t forget pretzel buns, a top-tier bun that adds a ton of flavor with little effort.
Whatever type of bun you choose should enhance the burger's flavor and provide a satisfying eating experience.
Another factor to consider when choosing a bun is its texture. A softer bun can contrast the crispy texture of the meat, while a denser bun can hold up better sauces and toppings without getting soggy. The size of the bun is also important—it should be just big enough to hold the burger and toppings without overwhelming the overall balance of flavors.
At FreshJax, we believe that every element of the dish matters, including the bun. By choosing the right type of bun, you can take your burger game to the next level and create a meal that's sure to impress.
Now that we've covered the importance of the burger bun in making a great burger let's dive into choosing the right type of bun for your needs. Here are four important factors to consider:

Whether you’re new to grilling and homemade burger seasonings or you’re a long-time grill master, there are so many different types of spicy sauces that can help you take your grilling game to the next level. From quick sauces that spruce up the mayo or ketchup you already have in the fridge to more complex, from-scratch sauces, there’s something for everyone in this piece. Here, we’ll dive into 4 delicious spicy sauces that you can add to your repertoire the next time you want to add a personal touch to your burgers.
First up is an easy recipe that comes together in just minutes. Curry ketchup is an excellent and quick option if you’re in a pinch and looking for a way to spice up your burgers without spending a lot of time making a killer sauce. This sauce is inspired by German curry ketchup (called Currygewürzketchup, say that 10 times fast) and makes an excellent topper for burgers, hot dogs, and fries. It even works as a great marinade.
To make this quick curry ketchup, you’ll need:
Just add all of these ingredients to a bowl, give it a good mix and let it sit for a while so the spices can all get incorporated together.
While you can make a simpler version of curry ketchup by adding curry powder to ketchup, the few extra ingredients listed above help take this sauce up a notch and make it more unique.
Okay, so you could put all these ingredients in separately if you wanted, but that’d make for one messy burger (and too many bottles on the table). So, why not make a sauce with all the go-to burger classics in one place? That’s exactly what this sauce is — which is why we call it “the works.” This sauce makes an excellent burger topper and a great dipping sauce for fries, onion rings, and whatever else you feel like dipping!
For this sauce, you’re going to need:
Simply add all of these ingredients to a bowl and whisk them up until everything is well combined. You can use this mix immediately, but it is much better if you cover it and let it chill in the refrigerator for at least an hour to really let those flavors meld together!
If you’re looking for a burger topper that offers a bit more of a homemade touch, this chili chutney might be a great option. This recipe takes about an hour to make, and the end result is a delicious pepper chutney that can add a boatload of personality to any burger (or even be enjoyed on a slice of bread!).
To make this chutney, you’ll need:
The first step is to char the peppers. You can do this on a gas stove, on a grill, or with a broiler. The idea is just to get the peppers nice and charred. Once your peppers are charred, put them in a covered bowl until cool enough to touch. Removed the charred skins and cut the peppers in half to remove the seeds and cores. Chop the peppers and set aside for now.
In a pan, heat the oil over medium heat and add the onion, rosemary, bay leaves, cinnamon, and season with salt and pepper. Cook for about 20 minutes, until the onions have softened and darkened. Now stir in the chopped peppers, vinegar, and sugar and continue to cook. Stir occasionally until the mixture has reduced and is thick and syrupy (around 30 minutes). Remove the bay leaves and cinnamon stick before transferring the chutney into a jar and season once again with salt and pepper as needed.
If you’ve never tried spicy ketchup, you’re in for a treat. With the right combination of spices, you can take a classic like ketchup and turn it into a standout sauce. Now, you can, of course, spice up that bottle of ketchup that you probably already have in your fridge, but there’s something special about making homemade ketchup. So, if you’re looking for a truly homemade sauce for your next grill-out, bookmark this one; it’ll be worth it!
What you’ll need:
To make this spicy ketchup you’ll need a blender, a pan, and a stove. This sauce is a bit more labor intensive because you are making it from scratch, but it is worth it in the end!
Step one is to blend the tomatoes and their juice until they form a smooth juice. After that, you’ll need to heat the onions, garlic, and salt in the vegetable oil on medium heat until the onions are golden brown (around 8 minutes). Next, add the spices and cook for 1 minute, stirring frequently. Add the tomato juice, tomato paste, sugar, and vinegar and cook for 45-55 minutes (until it becomes thick). Finally, puree everything in the blender and chill the mix for at least 2 hours to allow the flavors to combine thoroughly.
Whether you have always been a fan of the classic ketchup and mustard burger toppings or have always been searching for more unique burger toppings, we hope these four spicy sauces have inspired you to have some fun with your burger toppings. If you’re an avid griller or cook, you likely already have most of the ingredients you’d need for these sauces, and you can always whip up a small batch to try out before committing to a larger amount by scaling back the recipes.

And since it allowed us to pretend that getting Jason to spring for lunch constituted legitimate research, we have declared the next several weeks here at the Inspiration Blog to be Burger Time!
That means for the we will be discussing what makes a great burger:
Is it the patty (plant-based or otherwise)? It sure could be!
Maybe, it's the condiments? We'll See!
Could it be the bun? That's Important, too!
Could it be the sides that swing it? Seems possible!
Could it be the Burger Seasoning? We are a Spice company... can you blame us? 😁
So without further ado...

If you’re new to the world of Mexican desserts, then you are in for a treat. There are so many classic Mexican desserts that can make the ultimate ending to any meal, and we’d be here for days if we tried to explore them all. But we can highlight some of our favorite Mexican sweets that have as much use for those delicious organic spices tucked away in your cabinet as delicious Mexican meals do!
Pastel de elote, or Mexican sweet corn cake, is a very popular and delicious way to end your meal. This classic Mexican dessert is easy to bake and not super sweet, so you can dress the sweetness up or down depending on your preferences and the toppings you pick. You can top it with powdered sugar, caramel, fruit, or vanilla ice cream (or any combination of these) for a sweeter take.
To make this delicious Mexican treat, you’ll need:
Start by preheating the oven to 375°F and preparing a bundt pan or cast iron skillet by buttering and flouring it. To make the batter, cream your butter and sugars and add the eggs one at a time until the mixture is fully incorporated. Next, add your vanilla and oil and beat before adding in your dry ingredients (flour, baking powder, and salt).
Once all of those are incorporated, add in the half and half and mix until the batter is smooth. Finally, fold in the corn and pour your mixture into your prepared bundt or cast iron pan. Bake for 25-35 minutes and let cool for a few minutes before slicing.
If you’re looking for a way to spice up this cake, you can add some cinnamon, nutmeg, cardamom, or allspice to the mix as well.
While flan is not originally from Mexico, it has become so popular in Latin America over the years that most people associate it with Latin American cuisine more than any other. This is for a good reason. When flan was introduced to Mexico and the rest of Latin America by the Spaniards who ran with it when the Roman Empire fell, it was quickly adopted, adapted, and, dare we say, improved. Now there are coffee, chocolate, and coconut flavored flans that have become increasingly popular across the country and worldwide.
And luckily for all of us, flan is incredibly easy to make and requires minimal preparation! There are endless recipes for flan, and you can find recipes for flavored flans as well, but let’s start with a basic caramel flan first.
So, what do you need to make a delicious, creamy flan?
The sugar, water, and lemon juice are all for the trickiest part (the caramel), and everything below that is for the custard part of the flan. There are three main steps to making a caramel flan: the caramel, the egg mixture, and baking. Add the sugar, lemon juice, and water to a pan to start your caramel, and occasionally stir while it browns over medium heat. Remove it from the heat as soon as it becomes golden, and carefully pour it into the bottom of the cake pan or baking dish you use for your flan.
To make the egg mixture, you simply mix all the remaining ingredients until the mixture is smooth and free of lumps. You can pass it through a sieve to get it super smooth.
Once your egg mixture is done, carefully pour it on top of the caramel and set your flan in a deep rectangular pan to create the water bath. Pour water into the rectangle pan (careful not to get any into your flan dish) and fill until you’re about halfway up your flan pan. Bake at 350°F for 60-65 minutes and let it cool before serving. You can also refrigerate it, but we do not recommend freezing it as it will compromise the smooth texture of the flan.
No post about Mexican desserts would be complete without including tres leches cake. If you’ve never had one, we hope you’re ready to find your new favorite indulgence!
To make tres leches cake, you need:
Cake
Milk Mixture
Topping
The process for this dessert is very straightforward. First, bake your cake. If you do not want to make a cake from scratch, you can also use a boxed mix. After you’ve made your cake, take a fork and poke holes all over the cake. This will help the milk mixture to soak into every part of the cake. Pour your milk mixture on top of the cake and let it soak for at least 3 hours. Top your cake with the stabilized whipped cream topping and sprinkle the cinnamon on top, and you are done! You can also add some fruit to the top for more flavor (our favorites are fresh strawberries or canned peaches).
If you’re in the mood for something sweet but don’t feel like baking anything or having leftover sweets, a delicious and creamy cup of Mexican hot chocolate may be just what you are looking for. All you need to make this effortless treat is:
Simply mix all of the ingredients in a pan, adding the bittersweet chocolate last after everything else is mixed and beginning to heat up. Whisk everything together and keep heating until the mixture is smooth, creamy, and hot. Serve in your favorite mug with your favorite toppings (we like marshmallows, chocolate shavings, and a sprinkle of cinnamon or cardamom)!
We hope these four incredibly easy and mouthwatering Mexican desserts inspire you the next time you’re looking for a sweet treat after a meal. One of our favorite things about Mexican desserts, besides their taste, is that they do not shy away from using delicious seasonings and spices in them.
This, in our opinion, makes them stand out from other desserts, and it makes us excited to make some sweet treats for ourselves just thinking about it! So, if you are looking for ways to incorporate spices into your desserts, we hope you try out one of these treats or make your own using some of our organic seasonings, like Maple Cinnamon!
