Ingredients
- 4 tortillas
- 1 Tbsp. dairy-free butter
- 1 block firm tofu, drained thoroughly
- 1 C grated dairy-free cheese
- 4 handfuls spinach
- 1 green bell pepper, diced
- 1 pack Field Roast mini maple sausages, chopped

FreshJax Tofu ScrambleĀ® Spice Mix (amount indefinite, the more the better)
- Optional, but recommended additional FreshJax Spice Blends: Spicy All-Purpose, Brunch Life, Sriracha Salt, Peppered Habanero
Directions
In a large pan, melt a dollop of vegan butter on medium heat and add peppers and sausage. Saute' for 2 minutes, move to one side of the pan.
Crumble tofu into other side of pan and cook for 5 minutes, adding as much FreshJax Tofu ScrambleĀ® Spice Mix as your heart desires.
Mix peppers, sausage, and tofu together.
Evenly distribute cheese on tortillas and heat them in microwave or toaster oven just until cheese melts.
Evenly distribute spinach on each tortilla.
Evenly distribute burrito filling into each tortilla.
Add other FreshJax spice blends as desired.
Wrap burritos with love and care.
