1 cup cooked quinoa
1/2 zucchini, chopped
1/2 bell pepper, sliced
1/4 red onion, sliced
1/2 apple, sliced
1 tbsp olive oil
1 tsp Daring Dunes® Hot Harissa Seasoning
1 tbsp tahini (optional)
Preheat oven to 425°F (220°C).
Toss zucchini, bell pepper, and red onion with olive oil and Harissa seasoning.
Roast vegetables for 20 minutes until tender and slightly caramelized.
