Maple BBQ Quinoa with Roasted Veggies

This hearty grain bowl combines fluffy quinoa with roasted vegetables and Rosy Cheeks® seasoning for a sweet and smoky BBQ kick.
Ingredients

1 cup uncooked quinoa

1 zucchini, diced
-
1 red bell pepper, diced
-
½ red onion, sliced
-
1½ tsp Rosy Cheeks® Maple Bourbon BBQ Seasoning (or more to your heart’s desire!)

2 tbsp olive oil

Fresh parsley or green onion (for garnish, optional)
Directions
Cook quinoa according to package instructions; set aside.
Preheat oven to 400°F. Toss zucchini, bell pepper, and onion with olive oil + Rosy Cheeks® Maple Bourbon BBQ Blend.
Spread veggies on a sheet pan and roast 25–30 minutes, flipping halfway through.
Stir roasted veggies into quinoa and mix well.
Serve warm or chilled, garnished with fresh herbs if desired.
