Wholesome, colorful, and cheesy! Taco-Stuffed Bell Peppers combine seasoned beef, rice, and melty cheese for a fun and healthy twist on taco night.
Ingredients

4 bell peppers, halved and seeded

1 lb ground beef

2 tbsp FreshJax® Organic Taco Seasoning

1 cup cooked rice

1 cup shredded cheese
Directions
Preheat oven to 375°F.
Brown beef in a skillet, then stir in FreshJax® seasoning and rice.
Stuff each pepper half with the beef mixture and top with cheese.
Arrange in a baking dish and cover loosely with foil.
Bake 25–30 minutes until peppers are tender and cheese is melted.

Notes: Add black beans or corn for more texture and flavor.
