A creamy coconut curry packed with colorful vegetables and the aromatic warmth of FreshJax® Organic Thai Spice Blend.
Ingredients
- 1 tbsp olive oil
- 2 cups mixed veggies (bell peppers, carrots, broccoli)
- 1 tbsp FreshJax® Organic Thai Spice Blend
- 1 can coconut milk
- 1 tbsp soy sauce
Directions
Heat oil in skillet, add vegetables and Thai Spice Blend.
Stir in coconut milk and soy sauce; simmer until veggies are tender.
