Ingredients

1 block tofu, scrambled

1 tbsp olive oil

2 tsp FreshJax® Tofu Scramble Seasoning

4 cups mixed greens

1/2 cup cherry tomatoes

1/4 cup cucumber
Directions
Cook tofu with oil and seasoning.
Assemble salad with greens, tomatoes, cucumber, and tofu scramble.
Dress with olive oil + lemon juice.
