But seriously (we can be serious... sometimes), This recipe is an incredibly healthy take on what we are pretty sure is the best snack food ever: Nachos! These Gluten-Free, dairy free nachos will leave you feeling fulfilled instead of just full.

Looking for a way to switch up your game-day snacks? The next time youโre craving nachos, try out this delicious swap.
In my better for you version, russet potatoes are covered in good-for-you-seasoning, baked (no frying needed), and covered in delicious toppings! Itโs sure to be a crowd pleaser.
Hereโs what youโll need for 5 servings:
Ingredients

9 peeled russet potatoes

2.5 tbsp. FreshJax Taco Seasoning

1 tbsp. Olive oil

1 lb. ground beef
-
1/4c Corn
-
1/4c Black beans
-
1/4c Red onion (diced)

1/4c tomato (diced)

1/4c Olives (sliced)
-
1/8c Cal-Organic Farms Cilantro (chopped)

1 container Forager Project Cashew yogurt
-
1/2 tsp Lime juice
-
1/4 tsp Garlic powder
-
1/4 tsp Salt
Non-Dairy Crema
Directions
Slice potatoes thin using a mandolin.
Add 1 tbsp. of olive oil and 1 tbsp. of taco seasoning to potatoes.
Mix well until all potatoes are covered with seasoning.
Place on a pre-greased baking sheet.
Cook at 400 for 4-5 minutes on each side or until golden brown.
Place ground beef in a frying pan.
Add 1.5 tablespoons of taco seasoning to beef and cook thoroughly.
Layer chips, beef, beans, tomatoes, onion, corn, olives, and cilantro.
Mix cashew yogurt with lime, garlic, and salt.
Top nachos with crema.
