Ingredients

2 cups mixed veggies (zucchini, bell pepper, carrots)

2 tbsp olive oil

2 tsp FreshJax® Italian Herb Seasoning

Salt & pepper to taste
Directions
Preheat oven to 425°F.
Toss chopped veggies with olive oil, Italian Herb, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes until tender and caramelized.
Optional: Drizzle with balsamic glaze before serving.
