Vegan “Egg” Fried Rice

A plant-based twist on fried rice, made eggy with tofu scramble.
Ingredients

2 cups cooked rice

1 tbsp sesame oil

1 block tofu, scrambled

2 tsp FreshJax® Tofu Scramble Seasoning

1 cup mixed veggies (peas, carrots, corn)

2 tbsp soy sauce
Directions
Heat sesame oil in a wok or skillet and sauté mixed veggies until tender.
Add cooked rice, tofu scramble seasoned with FreshJax® Tofu Scramble Seasoning, and soy sauce.
Stir-fry for 5–6 minutes until everything is heated through.
Recipe Note
Flavor Tip: Garnish with green onions and sesame seeds.
Traditional Option: Use scrambled eggs instead of tofu.
