It is always a good day when we hear from one of Favorite FreshJax Friends Marc (@ales.n.tails) with a new culinary creation.
And it is extra awesome when he whips something up with his own Custom Ales.n.Tails West Coast Tri-Tip Seasoning. Creating this blend with a friend really makes the flavor shine through!
Marc's West Coast Style Smoked Corned Beef

Corned Beef Sandwiches are usually assorted with the East Coast, so we rolled our eyes a bit when Marc told us he had a West Coast Recipe. Not only did we have to eat our words, but we also HAD to try this sandwich. OMG it is twice as good as it looks...
And it looks phenomenal!
Ingredients

Corned beef brisket (point or flat), approx. 3 lbs

FreshJax Ales.N.Tails West Coast Tri-Tip Grilling Blend

1/4 cup beer
-
1/2 cup melted beef tallow
Directions
The night before, rinse off and soak the corned beef in water overnight in the fridge in a covered container.
The next day, pat the meat dry and season with West Coast Tri-Tip Grilling Blend and let sit out at room temperature for at least an hour.
Preheat your smoker to 250ยฐ using a wood such as oak.
Smoke the corned beef until the internal temperature reaches 165ยฐ, spritzing with beer every 45 minutes.
Wrap the meat in spritzed butcher paper, brushing melted tallow all over the beef before wrapping.
Place back into the smoker until the internal temperature of the meat reaches 203ยฐ.
Take the wrapped meat out, place into a foil pan, cover with foil, and place into an empty cooler or oven to rest for an hour
Slice against the grain and enjoy with your favorite sides or make sandwiches!
Recipe Note
We loved this recipe with Marc's Ales.n.Tails Blend, but we also like it with that Amazing Blend AND some organic Cracked Black Pepper.
It added an "air of pastrami" to the proceedings.
