Citrus Pepper Chickpea Salad
Tangy tahini sauce, crisp apples, and mashed chickpeas come together to create the perfect chickpea salad. Try it in a sandwich, wrap, or over a leafy green salad.
- 1/4 cup tahini
- 1 Tbsp unsweetened plain almond milk
- 1 Tbsp lemon juice
- 1 tsp Bragg Liquid Aminos or soy sauce
- 1 tsp red wine vinegar
- 1 tsp dijon mustard
- 1 tsp maple syrup
1/2 tsp FreshJax Organic Citrus Pepper Spice
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 apple, diced
- 1/2 red bell pepper, diced
- 1 stalk celery, diced
- 1 Tbsp capers
- 1/4 cup grapes, quartered
In a small bowl, whisk together the sauce ingredients.
In a larger bowl, mash the chickpeas with a fork or potato masher.
Add the remaining filling ingredients to the chickpeas and stir to combine.
Pour the sauce over and stir until all of the filling ingredients are well coated.
Serve in sandwiches, wraps, or on a salad.
