Ingredients
- 2 1/4 cup flour (regular or gluten-free)
- 1/2 cup brown sugar
- 1 Tbsp baking powder
- 2 Tbsp FreshJax Maple Cinnamon
- 2 cups vanilla almond milk
- 3 Tbsp olive oil
- 1 apple (diced into small pieces)
- 1/4 cup pecans (chopped)
- 1 Tbsp maple syrup
Directions
Preheat oven to 400 degrees F.
In a large bowl, combine flour, brown sugar, baking powder, and 1 Tbsp Organic Maple Cinnamon. Stir to blend dry ingredients together.
Add almond milk and olive oil. Stir again.
Fold in diced apple.
Divide evenly into 12 muffin cups.
In a small bowl combine pecans, maple syrup, and 1 Tbsp Maple Cinnamon.
Top each muffin with the pecan mixture.
Bake for 20 minutes.
