Rosy Cheeks Maple Bourbon Hawaiian Meatballs in the Instapot

We tried this recipe for the first time last night and loved it. It was so easy that even "Chef" Joe could do it, and there were plenty of leftovers for is lunch today.
Ingredients
- 1 lb. bag of meatballs
- 20 oz. can of pineapples
- 1 chopped red pepper
- 1 cup brown sugar
- 1/2 cup Rosy Cheeks Maple Bourbon BBQ Rub
- 2 tbsp. soy sauce
- 3/4 cup white vinegar
Directions
Place the meatballs into the Instapot first. That will help them absorb the sauce
Chop the red pepper and add it to the pot along with the vinegar, brown sugar, and soy sauce.
Next, add the pineapple chunks. If you like the meatballs "Sticky", drain the juice. If you prefer them "Saucy", add the juice to the pot.
Cook in Instapot for 7 minutes. Be careful with that steam everyone!
Serve over rice as a super easy meal. Tip: if you prefer them "Saucy", add any excess sauce to the rice while it cooks for extra flavor.
Recipe Note
We made this with Ikea meatballs (our daughter likes the plant-based ones), but you can substitute whichever brand you prefer or even home make them. But with "Chef" Joe... we try to keep it easy-peasy...
