This Honey Soy Glaze really brings out the flavor of the meat and boy does the presentation POP. (That's a lollipop joke. There are a lot dads on our team...)

Marc's Vampepper Chicken Lollipops with a Honey-Soy Glaze

Asian flavors combine with our Vampepper Garlic Pepper Blend to make this a flavor Knock-out. We are getting "the Hungries" just looking at it. From the Grill Master himself:
"I love quick and easy meals that satisfy. This was definitely that. Started the night before by trimming the drumsticks and pulling off the skin and tissues so that about three inches of the bone was exposed, hence a lollipop. Then, I dry brined them with @freshjax VamPepper and a little baking powder (crispy skin trick) overnight. I loaded up the @chargrillergrills Wrangler with @bbcharcoal , @westernbbqwood mesquite, and got it ready for two zone cooking. I smoked the chicken indirectly for 30-35 minutes before moving them over the flame to crisp the skin on all sides. I then glazed the lollipops with a honey-soy mixture and let them cook indirectly for another 5 minutes to let the glaze set. Also grilled some shrimp seasoned with olive oil and @freshjax Bold Bayou for a few minutes a side. Served with a side of crispy potatoes and a hungry belly!"

Ingredients
- 8 chicken drumsticks

FreshJax VamPepper Garlic Pepper Blend
- Baking powder
- 1/4 cup soy sauce & 1/4 honey mixed at room temperature
Directions
The night before, trim and pull off the the skin and connective tissues from the last three inches of the drumsticks to create "lollipops."
Pat dry and season with VamPepper and a little baking powder to dry brine on a cooling rack in a tray, uncovered in the fridge overnight. The baking powder helps remove the moisture from the skin to help it get crispy when cooking.
The next day, take the chicken out at least one hour prior to cooking. Preheat your grill for two zone cooking at about 300ยฐ and cook/smoke the legs indirectly for 30-35 minutes. Mesquite and cherry wood go very well with chicken.
Next, increase your grill to high heat and move the lollipops over the direct flame to crisp the skin on all sides.
Lastly, move them again away from the heat, and brush all sides with the honey-soy mixture and allow to set up for about five minutes with indirect heat, remove and enjoy!
Recipe Note
You may not have seen it with all the awesomeness going on, but this paired nicely with some grilled shrimp. Marc lightly dusted them with some Bold Bayou Cajun Seasoning.
