Reverse Seared Pork Chops with Coffee Rub

Ingredients
- Bone-in, thick cut ribeye or porterhouse pork chops

FreshJax Sunrise Cowgirl's Coffee Rub
- Olive oil
Directions
The night before cooking, pat the chops dry with a paper towel and season all sides with Sunrise Cowgirl's Coffee Rub and place on a warming rack on a tray, uncovered in the fridge to dry brine.
Take the pork chops out an hour before cooking to allow them to come to room temperature.
Set up your grill for indirect smoke at 250ยฐ using a fruited wood such as apple or cherry. Place the pork chops away from the fire to smoke for until the internal temperature is at least 145ยฐ (about an hour) and take them out to rest for at least 30 minutes.
Add more wood to the fire and set up the grill for high heat. Apply a thin coat of olive oil to all sides of the chops and sear directly over the flame for 30 seconds a side and a little time on the edges.
Serve right away and enjoy!
