Ingredients
- olive oil
- 1 yellow onion, diced
- 2 Tbsp fresh thyme
- 2 (28 oz.) cans diced fire roasted tomatoes
- 2 Tsp. maple syrup

3 Tbsp FreshJax Organic Daring Dunes: Hot Harissa Blend
- 1 (14 oz.) can coconut milk
- 1/4 cup fresh basil
- 4 oz. plant based feta crumbles
- chickpeas, rinsed and dried

FreshJax Organic Salt-Free Garlic Herb Blend
Directions
Coat pan on medium heat with olive oil then add onion and thyme then mix.
Add fire roasted tomatoes, maple syrup FreshJax Daring Dunes then mix.
Add coconut milk, mix, then blend all ingredients.
Lightly coat chickpeas with olive oil and season with FreshJax Garlic Herb to taste.
Bake on 400Ā°F for 20 minutes.
Top soup with chickpeas and enjoy!

This new recipe was a blast to make and it is INSANELY delicious! It is definitely not your plain canned tomato soup that is filled with excessive salt. Give it a shot on one of these chilly days!
