Smoked Cheesy Creamed Corn

Ingredients
- 48 oz fresh or frozen corn
- 8 oz softened cream cheese
- 4 oz softened butter
- 8 oz shredded sharp cheddar cheese
- 8 oz heavy whipping cream
- 2 ea beefsteak tomatoes, diced
- 1 ea jalapeno
- Handful of chives
- Olive Oil

Triple Dog Dare Bloody Mary Mix
Directions
If using frozen corn, thaw out and let drain in a colander.
Preheat your smoker to 250°.
Heat a cast iron pan on high heat and put a little olive oil in it. Put the corn in the pan, stirring occasionally to develop a slight char on the kernels.
Place the corn, cream cheese, butter, sharp cheddar, heavy whipping cream, and tomatoes (you can add other veggies if you like) in a foil pan.
Place in the smoker to smoke for 2-3 hours, stirring after the first 30 minutes and occasionally after.
Top with fresh sliced jalapenos and dashes of Triple Dog Dare Bloody Mary Mix.
Recipe Note
Note: If everyone likes spice, incorporate the seasoning and jalapenos in the foil pan of ingredients before placing into the smoker.
