Hillary's Citrus Pepper Roasted Cauliflower
This is our favorite way to eat cauliflower! It cooks down when roasted into tender bite size pieces, so don't be intimidated by cooking two heads of cauliflower at once. It makes a great game day snack or side dish for dinner.
Preheat oven to 400 degrees.
Line a large baking sheet with tin foil or parchment paper for easy clean up.
Chop cauliflower into bite size pieces and put them in a large bowl.
In a small bowl, combine and whisk together the remaining ingredients.
Add the liquid to the cauliflower and stir well to coat each piece.
Lay coated cauliflower florets on the prepared baking sheet and bake for 40 minutes, stirring half way through.
Makes a great side-dish or snack!
